Welcome to Beth’s Journey!

A little bit about me… my name is Beth (if you couldn’t guess from the title of my blog) and I am a 28 year old foodie working and living in Washington, DC. I originally grew up in Connecticut, but came to DC for undergrad and never left. Somehow that means its been almost 11 years since I moved here… crazy!

I have struggled with my weight for my ENTIRE life and had been overweight for as long as I can remember. I decided to change this once and for all in March 2009 when I joined Weight Watchers and it completed transformed me, both inside and out. I have now lost a total of 88 pounds since my peak weight of 250 pounds 6 years ago, finally hitting my goal weight of 164 pounds in May 2011.

I started Beth’s Journey in February 2010, after I’d already lost most of the weight, as a way to document the last leg of my weight loss journey and to share my story with others.  Healthy living and cooking became serious passions of mine once I decided to change my life, and I wanted a creative outlet to openly discuss my struggles and showcase my recipes, so that’s how Beth’s Journey came to be. I update it every Monday through Friday with different recipes, weight loss tips, exercise tips, and general ramblings about my life.

      Hi Celeste,
      Fine job for getting close to your best weight!!
      The thing is- do you feel you are a “natural” at your own self-care and health?
      Do you have a plan that works and will go the distance…a lifetime?
      I am 48 and feel the best ever~and have seen what micro decisions can do over time.
      I didn’t get fit until after 40-

    How do you get started with the Simply Filling Food Program. What do you read? How do you record daily? What is the difference with a power food and a power food with triangle? Are foods that are not a Power Food deducted from you default 49 points and additionally your daily activity points earned. Can you point me in the right direction. On the Points Plus Program for 5 weeks. MaryAnn001004@aol.com

    Thank you for sharing your story.
    I have used your recipes and love them. I, especially, like the presentation. Preparation is a lot more fun seeing the pictures along with the very clear instructions.
    I have tried to find your Chicken Curry recipe and am unable. Would you please share it with me.

      Hi Christina – That was just about the longest string of compliments I’ve ever received. THANK YOU!!!!! :)

      I am 5’8 if I’m being generous, 5’7.5 if I’m being accurate. 164 is the highest healthy weight according to WW for someone who is 5’8, so that is what I set to my goal weight. I am currently struggling to get back there – and it’s tough!

    Hi Beth,

    I recently decided that I needed to get my weight under control and your blog gave me the motivation to join Weight Watchers (the online program) and begin a new, healthy, lifestyle for myself! I’m happy to say I’ve been on the program (and loving it) for over 3 weeks; I’m down 8 pounds and tons of inches (my start weight was 177 and my goal is 135). I finally feel like I can do this!

    I just found this page by accident , glad I did. I joined WW again in February, joined about 5 times in the past but never seemed to stay on track. I’ve learned that you actually have to weigh, measure and track if you want to have success. I’m doing much better this time around and am down 52 lbs. Still have a long way to go, but fell like I’m finally on track. Looking forward to hearing from everyone and reading your blog. Congratulations on your weight loss.

    It feels like it’s all coming together!
    Hi Beth, I too have stumbled upon your blog as if it were meant to be. I have been on this weight loss journey for a good part of my life. I’ve seen and done pretty much all there is to do on the diet front. That is EXCEPT Weight Watchers! I know, call me crazy but I avoided it thinking I knew it all already but obviously not everything cause I am still about 40 lbs shy of my goal. I think what I was missing was a place to be accountable and to go for support. So here I am starting my 3rd week, 7lbs down and LOVING IT!! So much so that I was already visualizing myself as a leader someday. That’s how I found your blog. I just love how “real” you keep it. Your food choices and eating patterns I sooo identify with and I look forward to each and every post. I congratulate you on all that you have accomplished thus far and am sure to see good things come your way in the future!

    LOVE your blog! My friend just recommended it to me and I am so glad I found you! I relate so much to you! I also run. I also do WW. I also am maintaining. I also worked for them (I actually quit because my life was too busy to make the time commitment). Maintaining weight once I got to LT is so much harder. because there is that expectation that you’ve already got to that point, it should be easy, but it isn’t. and there is also that added pressure because you don’t want people to look down on you for failing. Keep up the hard work!

It’s funny because when i first hit maintenance I thought it was SUCH a breeze – and here I am a year later struggling like woah! This time around it’s also way harder to lose weight, which is so annoying. :)

    Beth- You have been my inspiration to give WW another try. I have 60 lbs. until I reach my goal and knowing the amazing story behind your success gives me hope! I have always been overweight and lost 30 lbs a few years ago and have just been yo-yo’ing anything more than that. Thanks for the encouragement that you give to us all!       Hey Tracey – Thank you! I think the first step is to set a goal that is reasonable for you. Every day is probably not, so maybe start with 2-3 days, or even just one if that seems doable. Plan it into your schedule, get your workout clothes together, and make it as easy as possible to get yourself there.

      For people who really struggle with developing the habit, one suggestion I give in my meetings is to just commit to going to the gym and touching the door – not even working out. By the time you go there the third time, you’re starting to develop the habit and may even really WANT to exercise.

    Hello Beth,
    What an awesome story! I remember you from elementary school though not as a fat kid! You might not remember me, I was the Dutch girl. On the other hand I might have been the stupid kid that called you fat. If so, I’m sorry! Your story looks so familiar. I’ve lost and gained weight so often over the years and my cake decorating hobby has a lot to do with that. I was nice and slim last year, after I started eating right and running like you. Then I got pregnant, gained way too much and I cannot seem to get rid of it now. Anyway, just wanted to say you’re awesome! I know how hard it is, keep up the good work. You look amazing!

    How do you stay motivated. It seems as if I have no willpower. My job hosts a lot of company functions with unhealthy food. I can’t seem to say no. I started WW and fell off the wagon and can’t seem to get back on. HELP

      Hi Pamela! Thanks for your comment. I’m sorry you’re struggling with motivation! I’d say to start with some simple, attainable goals to get yourself off on the right foot. Success breeds success, so start small! Maybe work on getting just your breakfasts on track this week, or else including more fruits and veggies, or another attainable goal for you. Once you’ve master that, add on. I’d say the other big thing is to focus on adding things to your diet and life, rather than focusing on what you can’t have. It makes such a difference to look at it as filling your health with good things, rather than fearing the bad things! Good luck!

    Love your blog….very inspiring! I came across it when I did a search for Buffalo Tofu….I love your version of the Bleu Cheese dip. So easy and tasty.
