Trends in my Menu Plan

As you may or may not know, with my current job, I am able to work from home on Thursdays and Fridays. It’s pretty glorious because I love being in the office a couple days and then home for two – it really is a great balance. This also means that Thursdays and Fridays I don’t have to pack breakfast/lunch/snacks, and can actually cook my meals at home. Because of this, I’ve been having eggs in some form almost every Thursday and Friday for breakfast, and then sticking with oats for most of the days that I’m eating at work since those are easier to transport.

This weekend, I made a big batch of tempeh fajitas with green peppers, red onion, corn, and lots of spices. It was enough for one big serving on Sunday with two servings for the week to use for fajita salads. I made dressing for the salads is greek yogurt mixed with salsa – which tastes wayyyy better than it looks in pictures.

I also made a big batch of oats to carry me through the first couple days of the week, and then this meal plan was born:

In looking through my menu for the week, there are a couple trends that I notice:

    • I eat a lot of eggs. Pretty much every day because I even put an egg white in my oats.
    • I tend to have meat once a day at the most.
    • I don’t mind repeating things a few times a week, but not within the same day.
    • My snacks are always protein (cottage cheese, greek yogurt, cheese, milk, etc) paired with fruit. And boring. But that’s OK.
    • I go through phases with food, and a toasted English muffin with smashed avocado and a touch of sea salt has been high on my list lately. Even though you see it on this menu plan only once, that’s because I had about 5 of them over the weekend. Yum. Before this newest phase, it was refried beans and cheese. I could not get enough!
    • I like easy things during the week nights. Aka, cooks in less than 15 minutes. Those chicken apple sausages come in a pack of 4 and sometimes if I’m feeling super lazy, I just microwave them in a paper towel for one minute and they’re still so good.
    • I probably need to eat more veggies. I am really good about eating a ton of fruit, but I should focus on having veggies as part of my snacks.

    I love when you post your weekly menu! I also repeat a lot of foods during the week. My latest is a cauliflower “wrap” made with grated cauliflower, TJ’s light mozzarella, egg whites and spices baked until crispy. Top it with fresh salsa and sour cream. It’s delicious, filling and very low in points.

      Hi Ann – Good to know! I do want to start posting my menu plan a couple times a month because it helps me plan better too! Wait – tell me more about this cauliflower wrap. Is it like a casserole? Or do you bake it up and wrap it in a tortilla? Either way, sounds delish!

    I had to laugh when I got to the end of your food trends because you and I are pretty much twins! I eat eggs all the time. And I am pretty much obsessed with things for period of time. Right now it is just avocado in general…on toast, eggs, salad, as a snack. I think Im going to try a sugar free avocado pudding this weekend! YUM!

    My breakfast favorite right now is egg whites, scrambled with black beans, peppers, and spinach and a little taco seasoning. Then I add salsa and a little avocado. It is AMAZING and I am satisfied until lunch. I’ve been on Turkey wraps for lunch. A flat out with lots of hummus, turkey, spinach and some tomato.

    Hi Beth! I’m hoping you can do a post about your exercise regimen. I’m looking for ideas of things to do between my running days. I’d love any suggestions you can give on DVD workouts, etc. thanks!

    Lately I’ve been loving oatmeal for breakfast, 4-5 times a week. I make it with dried cranberries, chopped apple, a little cinnamon and some brown sugar. It’s so filling and it holds me over ’til lunch. Thanks for sharing your meal plans with us. Keep ‘em coming! :)

    Hi Beth! I wonder if you could share your recipe for the tempeh fajitas? They sound/loook really tasty and I’m looking for something new to add to my recipe box but I’m not the best at determining spices.

      Hi M! Honestly, it wasn’t much of a recipe. I sauteed two green peppers and one red onion in a little olive oil, then added in the trips of tempeh which i had steamed in the microwave beforehand. I always use the Trader Joe’s taco seasoning mix – it’s REALLY good and has nothing extra added except the spices (and it’s only 79 cents!). I poured in about half the seasoning and that was that!

    I love the weekly menus too!!

    Hmm, in terms of things I’ve been eating lately, I’m definitely on a greek yogurt kick. I’ve been eating it at least once, sometimes twice a day. It was definitely a staple for the last 3 years but lately I’m just loving it so much more!

    My phase right now is Garbanzo Beans! After getting off of white sugar & flour, my taste buds did a 180 & foods I never even noticed before have become delicious & soooo multilevel in their tastes!
