All of these recipes are original, super simple to follow, and full of wholesome ingredients! Most of them have step by step photos of the whole process, so you should have no trouble recreating these in your own kitchen. Most of the recipes are also customizable, so feel free to experiment with whatever you have on hand, and please let me know if you do a variation and how it turns out! Every recipe listed here is vegetarian except for one, though I do eat fish occasionally as well.

Dear Beth;
I just wanted to say that I am very very impressed with your recipes and photos. They are all very healthy and extremely creative.
I teach a course in ‘weight loss / management” and will certainly promote your website to my class. When there are many options for a quick fix…you have changed your lifestyle through healthy eating and exercise.
Congratulations!!!! It is one of the hardest things to do in life….change.

Beth, I am a vegetarian and have a hard time finding good weight watcher recipes. I am so excited to find your website, and hopefully be motivated to restart my journey.

Hey, just did your Lentil Bolognese Sauce and it was great, thanks for a great recipe. Even my son enjoyed it and he’s a dedicated carnivore.
