Watermelon

Hello and happy almost Friday! I’m in a great mood because it is gorgeous outside and my old boss is taking me out for early birthday drinks tonight (which is Tuesday!) These things add up to me having a bit of trouble sitting still…

My friend/coworker Kara brought me in a treat today. (Side note… isn’t it always weird to just say coworker when they’re your friend, or to just say friend when they’re your coworker, but maybe even weirder to put a slash in an introduction!?) Anyways, she posted a recipe for Blueberry Cheesecake Squares with Hazelnuts and they looked SO good that I commented on the entry asking when she was going to bring them in for me to try… well today was the day.

Oh man was that tasty! She used fat free cream cheese and fat free yogurt in the recipe instead of the heavy cream/full fat cream cheese, but these babies were still 5 points each! While absolutely delicious and I’m so glad I had it, it’s kind of funny that the picture above this is 5 points, and all the food below this (my real lunch) was also 5 points…

Carrot “chips” and raw broccoli (0 pts)

Massaged Kale Salad with 1 tsp olive oil (1 pt) and salt, plus 1/2 cup chickpeas (1 pt) and yellow squash (0 pts).

I also had a toasted wheat pita on the side (1 pt) and used it to eat the chickpeas and salad. For dessert, I had some watermelon chunks (1 pt).

Isn’t that crazy that you can have one blueberry cheesecake square OR carrots, broccoli, chickpeas, squash, kale, olive oil, a pita, and watermelon for the same number of points!?

What are some substitutions you’ve made in your diet to cut down on calories/fat or points? I used to snack on a lot of processed granola bars or yogurt with cereal and peanut butter, but as my points started dwindling down I realized I could get much more bang for my buck if I ate fruit or veggies for snacks. For the same number of points as 1/2 cup of yogurt plus 1 tbsp of peanut butter and 3/4 cup puffins, I can have an apple, a grapefruit, a cup of grapes, AND some watermelon. I might turn into a piece of fruit if I did that, but you get my drift… 🙂

Two Showers

And I thought yesterday was hot… Nothing compared to today so far. I woke up early to go for a run since I have a happy hour after work, and I thought I’d be OK since it was 7am… not so.

Last night after work I went over my friend Rachel’s new apartment who I haven’t seen in months! We hung out by the pool for a little bit but I was getting eaten alive by bugs, so we went inside instead to make dinner. I just watched but this dinner was DELICIOUS and seemed pretty easy!

In a food processor, she put:

– sun dried tomatoes

– olive oil

– breadcrumbs

And then added some parsley to the mix, and coated two tilapia filets. She just pan fried it and made some green beans to go on the side.

I don’t know what the proportions of ingredients were for this, but it tasted DELICIOUS. I didn’t think there was any way I could finish the piece of fish since it was pretty huge, but I inhaled it with no problem at all. I’ll definitely be trying to recreate something similar and will share ratios and WW points once I make it myself. Yum.

So this morning as I mentioned above, I woke up before 7 to go out for a run. I didn’t even check the weather but did drink a huge glass of water before I went. I decided to do 4 miles today since I woke up a little earlier, and from the second I stepped outside I could not believe how hot it already was! I made it through the first 2 miles no problem and then turned around to head back, and I was just having the hardest time. I kept saying “You can do this” over and over in my head, and then I made it to the 3.1 mile mark, but I knew if I started walking it would just take me longer to get home. I saw 3.2 on my Garmin and kept going, then 3.5, then 3.65 and I just could not run anymore. I stopped to walk, for the first time ever on a run! I literally had no choice – – I was parched, hot, sweaty, and just miserable. You gotta listen to your body sometimes when it says no, so I did and walked the last .5 miles home.

Here were the stats:

It’s crazy how that last .5 miles brought down my pace and speed SO much. The first 3 miles were 6.1 mph 6.1mph and 5.9 mph, and then the 4th mile was 5.0 mph. I was so happy I ran since I didn’t work out yesterday and have plans after work, but man that was rough.

One of the things I do whenever I’m working out is think about what I want to eat afterwards to help me get through. This morning I was trying to think of what to have for breakfast, and for some reason my mind was saying Blueberries with Milk, eaten like cereal. I’m not sure why but it is just what I was craving. For good measure, I added 1/2 cup fiber one cereal, and then 1 cup each of light soy milk and blueberries to the mix.

The picture makes it look like there’s more cereal than blueberries, but the blueberries cover the whole bottom of the bowl. This bowl was only 2 points total and while a little strange, totally hit the spot.

After I ate and showered, I decided to run and pick up my farm share for this week. It was more substantial than the last few weeks and is a good mix of veggies and fruit.

I got:

  • Kale
  • Arugula
  • Green Onions
  • Basil Plant
  • Apricots
  • Yellow Plums (babies!)

I am pretty excited to try the plums because I’ve never had them before – – and I haven’t had a fresh apricot in AGES so I can’t wait to dive into those either. I now have 3 herbs that I’ve been watering but NEED to plant from the last few weeks at the CSA – cilantro, chives, and now basil.

Walking home from the CSA, I started profusely sweating. Like sweat dripping down my face and back so I had to stop to wipe myself off a few times. No joke. I ended up making it back to my apartment in much worse shape than I had left, so I had to take a second shower! It is that hot out… crazy.

After I got to my desk I was still a bit hungry, so I had some watermelon (fresh from a NJ farm stand) with a few more blueberries. (2 more points)

So good and refreshing.

My plan is to go back to Weight Watchers today over lunch….. EEK. I haven’t been since April 1st, but I need to suck it up and cross of this June goal while it’s still June! Plus, I’m still paying for it, so it’s time.

After I get back from weighing in and eating lunch, I’ll post my game plan for getting to my goal weight/fitting in my bridesmaid dress by August 7th.. stay tuned!

Last Night in DC

Hiya! Happy Tuesday (!?) night. I am running around like a crazy lady trying to get my life in order/ready for a business trip tomorrow. I didn’t get a work out in today because I had too much packing and random other things to do before my trip tomorrow morning, but my eating and water consumption has been very on track. Plus, I get to the hotel tomorrow and am by myself until Friday, when my other coworkers arrive, so I plan to try to get a workout in both tomorrow and Thursday.

Afternoon snack today was watermelon chunks (1 pt) leftover from the party yesterday.

I loove watermelon – it completely reminds me of summer and I love that its so juicy and messy. Not the cutest fruit to eat at your desk but as long as no one’s looking, it’s fine. 🙂 I also had 3 Wasa Crackers when I got home (1 pt)

I just ate them plain because I was hungry before dinner was ready, and 3 of these is only 1 pt. They are crunchy but a little on the bland side – but I like them.

Wil made us dinner for my last night – Lemongrass Bok choy soup. It was sooo good and so healthy! First, he chopped up some lemongrass. Have you seen lemongrass before?

I hadn’t! We actually got it a few weeks ago at the Asian Market, but as long as you peel the outside parts of, it has a long shelf life. He put it into a mix of water and veggie broth and cooked it for 20 minutes or so.

While we had a glass of wine on the balcony.

I know I said cutting out unnecessary drinks is one of my goals for the month – but tonight was necessary – its my last night with him until Monday! 🙂 I ended up having 2 glasses of wine, one before and one with dinner (total 4 points). It was actually quite good – Garganegna, a leftover bottle from the party yesterday.

Once the lemongrass had infused in the liquid for 20 minutes or so, he strained it out of the water/broth, and added in chopped bok choy, a fresh ear of corn, 1 package of Nasoya pre-cubed tofu, and 2 servings of rice noodles. It made an awesome, super flavorful soup that was so delicious.

The lemongrass really flavored the broth, but we decided it probably would have been better to leave it a bit longer to let out even more flavor. The entire recipe had 14 points, so half of it (what’s pictured x2) was 7 points. Very worth it and something I will definitely make again – though next time I would probably add even more veggies to bulk it up a bit.

So overall today’s eating was really good, though it does feel a bit weird to be counting points! My daily target is 24, and the break down is like this:

Breakfast – Oats w/Vitatop – 5

Lunch – Huge Salad + Grapes 5

Afternoon Snacks – Watermelon + Wasa Crackers – 2

Wine – 2 Glasses – 4

Dinner – Lemongrass Bok Choy Soup – 7

I still have one left so I’ll probably have a snack in a little bit. I still have a bunch of random things to do before tomorrow – finish packing toiletries and other random things I need (phone charger, camera charger…) so I have to get back to it!
