Goat Cheese

Heya! Last night’s festivities turned out to be quite a bit of fun, but this morning was less so. I had a few of these:

Earl Grey Julip, which was basically a glass of bourbon on the rocks. yum. I also had two steamed veggie buns and a delicious salad to eat.

(Veggie buns are top right of the salad). The salad had shrimp, a citrus vinaigrette, and rice noodles on it. SO good.

The one win for the night was that I always tend to crave pizza after a night out, and last night was no different. BUT, instead of calling Domino’s like I usually do, I decided to make my own low-cal version of a pizza, with RF shredded cheddar on a flatout wrap with garlic. No picture but it was a victory none the less.

Today I made another Breakfast Parfait but reworked it a bit so it was only 3 points!

This had:

  • 1 cup of blueberries, microwaved for 90 seconds and then refridgerated overnight (1 pt)
  • 1/2 cup fiber one (0 pts)
  • 1/4 cup raw rolled oats (1 pt)
  • 1/2 cup nonfat plain yogurt (1 pt)

It was a little smaller than the one earlier in the week since I used half the yogurt, but it still kept me full for a few hours and tasted delicious. Plus, only 3 points for a breakfast parfait? Sign me up!

Lunch today was also really delicious and colorful.

This had:

  • 1 flatout wrap (1 pt)
  • 2 cups arugula (0 pts)
  • 2 fresh apricots, sliced (1 pt)
  • 2 tbsp goat cheese (2 pts)
  • 2 tbsp cherry craisins (1 pt)

On the side I had 2 sliced up baby cucumbers (0 pts)

And then a pink lady apple for dessert (1 pt).

This wrap was AWESOME. The arugula was spicy and peppery, so worked perfectly against the sweet craisins and apricots. Plus, the goat cheese was crumbled throughout and was creamy and rounded out the wrap perfectly. I got the apricots from my farm share yesterday and honestly cannot remember the last time I had fresh apricots! Dried, yes, but fresh? They are so delicious, sweet and juicy.  My boyfriend put a fresh goat cheese, apricot, and asparagus pizza on the menu at the restaurant, so I’m thinking about using the rest of them to make an at home version of that. Mmmm.

What are you plans for this evening? I am looking forward to tonight because I’m trying out an African Dance class with a few friends for the first time! It’s an hour and 15 minutes and I was told “Prepare to sweat!” so I think it’ll be a good workout, but something new and fun. I rarely ever do classes since I don’t belong to a gym, so doing this with my girlfriends will be a treat!

Ugh. My laptop died last night while I had it plugged in and only then did I realize my charger was not working. It was sad because I had an awesome meal on the roof at a nice restaurant followed by self serve fro yo and took lots of great pics. I loaded them onto my computer and selected delete from device after uploading just befote it died. So this really puts a wrench in my blogging plans for the weekend but ill try to blog from my phone as much as I can because I want to keep you guys posted on how I’m doing with being on track during my business trip.

After the course yesterday I went to the gym again and did arm weights. They only have free weights so I did biceps triceps pushups and some other random things with a weighted ball. I need to learn to do more stuff without instruction or machines. After that I did 40 minutes of intervals on the elliptical, alternating between incline of 4 with 1 resistance and incline of 10 with 8 resistance every 2 minutes. I did 5 minutes cool down for a total of 4.35 miles and 552 calories according to the machine. (I know the calorie count is off but I still like to look at it).

After the workout And shower I went to Nonna’s, a cute restaurant in Bricktown. I got a salad to start which was awesome! It had fried goat cheese on it along with strawberries and sliced radishes but I’m sure you can guess which the star ingredient was for me. For my main course I ordered an appetizer which was out of this world. It had avocado, mango and crab and was stacked Napoleon style in a cylindrical shape. It Wish topped with microgreens for garnish and was served with crostini. Oh my was it good! Avocado plus mango plus crab!? Match made in heaven. I must recreate this at home. I also had a glass of Viogner (white wine) with my meal which was perfect. I actually got to sit upstairs on the outdoor patio and it was a beautiful night so it was a gray experience. I left with a smile on my face.

After dinner I wandered around Bricktown a bit more and went to a frozen yogurt place that just opened over the weekend. It was super cute inside and had 16 flavors from peanut butter to pomegranate to cheesecake to pineapple. There were also toms of toppings and since it was self serve it was fun to put a little bit of everything I wanted on there (and not pay a dollar for each topping!) I ended up being boring and getting original tart flavor, but I topped it with raspberries, kiwi, mochi, and organic granola. It was awesome! I definitely plan to return again before I leave okc.

I just had an early night reading a book (side note – I have not turned on my TV once since I’ve been here!). This morning I went to the breakasr buffet at the hotel and it was really good! They had an omelet to order station, tons of fruit, hot dishes, oatmeal that looked a little funky, bagels and lox, plus cereal and milk. I ended up going with an eggwhite omelet with all the veggies they had – mushrooms, onions, tomatoes and spinach. I asked them to use as little oil as possible and also found out it was a mix of olive and calls oils, so quite healthy. I also loaded my plate up with fruit – pineapple, strawberries and melon, plus had a small cup of skim milk. It was delicious and I feel a lot less cranky than I did yesterday!

Busy day again today but ill be back.

Picnic!

Today ended up being such an awesome day! I didn’t come back for lunch because I didn’t really eat lunch today. Breakfast was so late and then I grazed over some of the leftover pastries until they were gone… so much for my tips on being good at potlucks/office meals!! 😉 It was soooo hot outside today and sunny, so we decided to take an afternoon trip to Starbucks and I got a Grande Caramel Light Frappucino… first one of the season!

I never get these, but saw it on the menu and it just spoke to me. So good and really good against the hot weather!

After I got out of work, I came home and changed into my bike clothes to go meet my friends Amber and Meredith for a picnic in DC! I really wanted to get a workout in, so I decided to bike into DC rather than metro or drive, and ended up getting in 11 miles there and back! I had a banana before my ride because I was getting pretty hungry, and the ride itself went really well. Today’s round trip stats:

I was happy with these stats because about 2 miles was biking through DC so there was a lot of stopping at lights, dodging cars, going slow, etc. The parts on the trail were quicker, and then in the city slower, so I was pleased with the average pace and total distance I did.

The picnic itself was so fun! We walked over to a grassy area near the Potomac and set out a sheet to sit on and set out all the food.

I brought the Flat-Out Wraps, pretzels, tomato, and arugula, and Amber and Meredith picked up all the rest of the veggies (avocado, red bell pepper, sugar snap peas, sprouts, and carrots), crumbled goat cheese, hummus, and some wine! We all made wraps with the veggies, cheese, and hummus. Here was mine:

It had arugula on the bottom, tomato, avocado, hummus, and goat cheese. I rolled it up and then had some pretzels, sugar snap peas, and red bell peppers on the side.

Delicious! It felt so nice to have a healthy picnic with lots of veggies and snacks. The wine spritzers didn’t hurt, either! We had such a nice time with the three of us.

That’s Amber, Yours Truly, and Meredith. The three of us were college orientation roommates (so long ago!!) and now we all still hang out 8 years later.

Are most of your current friends from high school, college, post college, or another source (work etc)? I have a handful of friends I’m still in touch with from high school, but most of my closest friends are from college. I do have a few close friends I’ve met through work too but the majority are from GW! 🙂

Back to Bikram

Happy Weekend to you! Disappearing on Friday nights seems to be a trend for me lately, sorry about that! I ended up spontaneously going to a Bikram class at 6 after work yesterday and it was awesome. I tend to get really into things when I get into them, and I think I burned myself out a little bit from going to Bikram for almost a week straight when I first started. I loved it, but getting the week unlimited of Bikram at the new studio made me overdo it a bit because I wanted to get my money’s worth (even though it was only $20).

I haven’t gone since that week, so it’s been almost 3 weeks, and when I went last night, it felt GREAT. I was a little concerned because I hadn’t planned to go, so I hadn’t been drinking that much water throughout the day and I wasn’t sure if I’d be mentally ready since its so intense, but when I got there, it just felt right. In the previous times I’d gone I was sort of counting down until the class was over (“Only 20 minutes left”) because I was so hot, but this time I could barely believe when the class was wrapping up and I just felt good the whole time. Lesson to me is that Bikram is good for me, but I should only go a few times a week max so I don’t get burned out on it.

After Bikram, I went into DC and hung out with my friend Lianne for a while. On the way there, I ate a Luna Bar that I had packed.

I really liked this flavor and to be honest I kind of thought I wasn’t going to like it. It was pretty refreshing and perfect for after Bikram. Lianne and I drank some wine and had some snacks (Garden Sunchips and toasted bread with hummus) but no pics. I had about 3 glasses of wine over the course of 3 hours so I didn’t overdo it too much. And our friends Amber and Mike came over for a bit to hang out too, which was fun. I didn’t end up getting home until almost 1am so just went to sleep pretty quickly after getting home.

And I slept hard – I don’t think I moved all night. I love that about Bikram. When I woke up this morning around 10:30am, I was starving since I didn’t have anything too significant after Bikram last night. I had some veggies in the fridge I wanted to use up, so I decided to do a farm fresh egg scramble.

I caramelized some onions, added in Mediterranean squash (which looks a lot like avocado to me!), and then added 4 eggs (for me and my boyfriend). Towards the end I added some crumbled goat cheese which was the perfect finish.

Doesn’t that squash look like avocado?? I served the scramble alongside a toasted english muffin (the only bread we have left in the house!) and 1/2 a mango. For the mango, I just sliced it along both sides of the big seed in the middle to separate the two halves. Then, for each half, I just sliced it (but not through the skin) and you can eat it like that with a spoon, a fork, or use a knife to cut those off the skin for perfect mango chunks.

Today I am going to a bootcamp style workout party with some other bloggers and friends in the DC area. It’s sponsored by Dove and apparently we’re getting free shirts and dove samples! I love me some free stuff, plus I’m sure this workout with kick my butt. Assuming I make it through alive, I’ll be back afterwards.

Old Standby

Hey and happy hump day! We’re officially over halfway through the week, woohoo! Also the weather in DC is holding up really well, so keep you fingers (and toes!) crossed that the thunderstorms don’t come so I can do a run or a bike ride tonight! 🙂

My OIAJ from this morning kept me full until 2pm!! I think it was the combination of 2 tbsp chia seeds and the peanut butter in the jar… whatever it is, I liked it. I wasn’t even starving by the time 2pm rolled around, it was just time to eat! I am loving these chia seeds, and loving making “overnight” oats with milk and vanilla extract instead of yogurt and milk. All good things!

Lunch today was my old standby, a sweet potato with black beans. Whenever I’m in a rush to pack lunch and/or haven’t cooked dinner the night before, I love to have a microwaved baked potato with black beans with a salad on the side. It’s so easy, filling, and delicious! To “bake” the sweet potato, I wash it really well, then poke some holes it in with a fork, and then cover it with a damp paper towel. I throw it in the microwave and hit the “Baked Potato” setting, which is my scary strong microwave at work is only 3 minutes, but will be more like 5-6 in normal microwaves.

On top, I put 1/2 cup of canned black beans. I used to rinse my beans thoroughly, but lately I’ve stopped rinsing them and just pour them over the sweet potato as is. The extra wetness from the bean juice (nasty!) actually gives it a good flavor and helps the beans stick more to the potato.

On the side, I had a spinach salad with strawberries and goat cheese.

Which made for a very colorful and satisfying lunch!

I also had a few extra strawberries on the side that wouldn’t fit on my salad.

Yum! I still have another container of strawberries at home because they were buy one get one free, so I’m trying to think of a fun way to use them up other than just eating them plain/chopped on salads. Any ideas?

Fighting for Five

Morning and happy weekend! 🙂

I decided last night I needed to go on a run today, because I haven’t run in SO long. I had my 10 mile race on April 11th, so not quite a month ago, and that was the last time I ran outside! Since then, I did intervals for 20 minutes on the treadmill twice, but I haven’t actually run outside, or for more than 20 minutes.

So, I woke up at 8:30 and set out to do 5 miles. It was hard. I got myself through it by saying that I could stop at 4 if I wanted to and just focusing on reaching certain landmarks. I was sweating a lot even though it was cool, and I was fighting mostly my head, but also the wind, to make the full 5 miles. But, I did it, and I’m really happy its done. I cannot let myself go for so long without running anymore! I think I was running so much leading up to the race that I kind of burnt myself out on running. That, buying a new bike, and doing the week unlimited Bikram just together made running get away from me, but we’re reunited now. 🙂

After my run, I was famished because I just got up and go. I quickly ate this juicy pear while thinking about what to make for breakfast.

It was perfectly ripe and delicious. There’s nothing quite like a perfectly ripe pear! I bought a few of these at Whole Foods on Tuesday and today was the first day it was ripe enough to eat. It was tough waiting but well worth it.

I decided to make something quick and filling because I have to get on the road, so I did an Egg Scramble with a Toasted Bagel Thin.

The scramble had:

  • 1 egg + 1 egg white
  • red onions, chopped
  • tri colored peppers, frozen
  • two morningstar farms sausage style links, chopped
  • crumbled goat cheese

It was delicious and filling. I haven’t had an egg scramble in ages but they are such an easy and delicious breakfast. Plus, you can use whatever you want which is always a good thing.

I’ve got to get a few things together then am hitting the road for Philly. We’re doing Mother’s Day dinner tonight at my sisters house so it should be fun. My boyfriends not coming though because he has to oversee brunch tomorrow at 2 of the restaurants since its the busiest day of the year. 🙁

“Light” Meal

Hiya! Tonight got away from me so I’m going to make this quick! This whole week FLEW by and I’m so happy its the weekend already. We had another office outing to Yogen Fruz today and I went back to my old standby, Green Tea frozen yogurt.

This has dark chocolate shavings and mochi (japanese rice cake) on top. Green tea ice cream has always been one of my favorite flavors, and this frozen yogurt tastes just as good as the real ice cream! It’s so creamy and packed with flavor. If you’ve never tried Mochi, it’s kind of like gummy bear texture but not quite as chewy, and much less flavor. I love them for the texture and its one of my favorite toppings for fro yo. Yum.

I was planning on going to Bikram after work, but I ended up getting caught up doing something until after 5, and by the time I finished it was too late to make it to the 6pm class. I decided to just come home instead, and once I was on the metro my eyes started getting so heavy and it hit me just how tired I was. I crashed immediately when I got home and slept for over an hour. It felt SO good. I rarely ever take naps because I usually wake up more tired than when I started, but today I didn’t really have a choice.. my eyes were closing on me! After I woke up I was really hungry, so I had a quick snack.

A toasted everything bagel thin with goat cheese from the farmers market… SO good! This was the first time this year I’ve tried this goat cheese and it is delicious. The woman who sells it owns around 500 goats (!!!) and raises them and makes the cheese on her farm. It’s so fresh and has such an intense flavor.

After my snack, I went and met my boyfriend at LIA’S for a quick meal after he got off. A vendor had dropped off this bottle of rosé of sangiovese wine for him to sample, so I had 1 and 1/2 glasses of that during our meal.

It was crisp and tasty. I don’t generally go for rosé wines, but the price was right on this one and I really enjoyed it. I wasn’t that hungry since I had the bagel thin, so I decided to go pretty light for my meal. I started with a bowl of minestrone soup which was their soup of the day. It was supposed to come with a proscuitto crostini but I ordered it without because the rest of the soup was vegetarian.

They also served some house-made foccacia bread with olive oil.

I had one piece of the foccacia and it was AWESOME. It had grey sea salt on it and it was really crispy on the outside and soft and warm on the inside. The olive oil is also really flavorful so just a little but goes a long way. It went really well with the minestrone soup, which was full of beans, tomatoes, and a delicious broth. We also got citrus cured salmon crespelle.

Which are basically little house cured salmon tacos. I had one of the three of these, and they have mache on them in addition. The salmon is cured with lemon, orange, lime, citrus vodka, salt, and sugar. Really tasty.

I ordered an appetizer salad for my main course with beets, mache, orange, goat cheese.

The oranges are hiding under the mache on this salad. I looove goat cheese and forgot until just now that I already had some today! Beets, orange, and goat cheese really is a winning combo – the sweetness of the citrus works so well with the other flavors, and I ate the whole thing.

I also had one small piece of my boyfriend’s pizza, which had shrimp, tomato, fontina, bottarga, scallion, garlic butter.

This was amazinggg… by now you probably know just how much I love pizza, and having one piece of someone else’s is the perfect solution in my book. Then, we had to try one of the new desserts (because we wanted to) so we went with the honey and pine nut tart with evoo gelato, spiced tuile cookie, and caramel sauce.

Oh.my.god. This was seriously amazing, and I don’t even love pine nuts that much! It kind of tasted like pecan pie but was a little looser, and the evoo gelato on top was just melt-in-your mouth incredible, and brought the whole dessert together.

Kind of funny because I intended to eat light but looking back it doesn’t look so light now does it. That said, I left feeling really satisfied, not stuffed by any means. But I kind of take back describing the meal as light. Kind of.

Juice Joint (Again)

Hi! It’s funny how it can go from so hot you are sweating just thinking about being outside, to so chilly you need a coat from one day to the next. DC will do that to you. If you couldn’t guess, its quite cool here today and my body is having a hard time adjusting! After my morning bowl of oats, I had a pink lady apple for a snack.

I wasn’t even that hungry for it, but I had it on my desk and it kept looking at me, so I couldn’t resist. 😉 It was really good, sweeter than a fuji but still crunchy. Mmm.

I got to meet my friend Leah who is visiting from out of town for lunch, along with our friend Rachel (who’s also local). We were trying to decide where to go, so I suggested the Juice Joint Cafe.

It’s close to work, delicious and healthy. I’m always baffled by how long the line is every time I go, yet how quick the people at the registers tackle the line. I never wait for more than a few minutes to order or to get my meal. I was toying with the idea of going with my usual Mozzarella and Roasted Veggie Sandwich, but today I went out on a limb and tried something new. I got the Roasted Portabello and Red Pepper Wrap.

This has roasted portabello mushrooms, red peppers, and goat cheese and is tossed with mixed greens in balsamic vinaigrette. It comes on a wrap of your choice, and I went with the wheat.

It was as good as it looks and sounds! It was pretty big, but lots of veggies so I felt full but not uncomfortably so. I love goat cheese and red peppers and portabello mushrooms, so this wrap was pretty much made for me. 😉 And catching up with my friends involved a lot of talking so I ate pretty slow which is always a good thing. I also had a bottle of the bubbly poland spring that I love:

Change of plans for tonight.. we’re going to cook dinner for my parents instead of eating at the restaurant because Wil actually has to help out there tomorrow night, so we’ll probably go tomorrow night instead. We’re going to do whole fish tonight so I have to run home after work, pick up some last minute things for dinner, and then run around and do some last minute cleaning around the apartment before they arrive. Wish me luck!
