Limo Ride

Happy Friday afternoon! Just a few more hours and it’ll be the weekend. Woohoo! I had a banana (1.5pts) for a snack this morning because I got hungry around 11:30am… that’s what I get when I eat lunch at home instead of at work!

Lunch was a remake of Tuesday’s salad, in a wrap form with a few tweaks.

  • 1 flatout wrap (1 pt)
  • 1/2 cup black beans (1 pt)
  • 1/2 cup corn (1 pt)
  • 2 cups mixed greens (0 pts)
  • 1/4 tiny avocado (1 pt)
  • salsa (0)

On the side, I had the same as yesterday…

Tomatoes, Baby Carrots, and RF Cheddar Cheese (1 pt). I seriously love this combo.  The cheese makes eating the veggies so much better. Who am I kidding? Cheese makes everything better.

So if you follow me on twitter, (@bethsjourneytt) you might have seen that I got a ride to the airport in a limo on Monday when i was coming back from OKC. This limo, to be exact.

Even though the hotel name was on the side of the limo, it still felt pretty snazzy to be taken to the airport in it!

Fro Yo Kind of Day

What a gorgeous day outside! It feels like such a sin to be inside today, but you gotta do what you gotta do to get paid…

Today’s lunch was simple but delicious.

  • 1 flatout wrap (1 pt)
  • 2 cups romaine (0 pt)
  • 1/2 cup chickpeas (1 pt)
  • 2.5 tbsp cherry craisins (1 pt)

I then doused the whole wrap in Organic German Mustard (0 pts).

It was so huge that I couldn’t even make it into a wrap, it was more like a giant taco. I don’t think I looked that cute while eating it because of the size factor, but it was goood. The cherry flavored craisins are something new I picked up at the store the other day and added a really nice flavor to the wrap. 1/3 of a cup of them is 2 pts, but that is a LOT of craisins for this purpose, so 1/2 of that was just fine. On the side, I had 1 serving of RF white cheddar cheese (1pt), a cup of grape tomatoes (0 pts), and some baby carrots (0 pts).

I was originally planning on putting the cheese inside of the wrap, but decided the wrap had enough going on without it, ate ate the cheese with the tomatoes instead. Good decision. This lunch was really satisfying and packed with a good mix of veggies, carbs, and protein, and clocked in at just 4 points.

For an afternoon snack, my department went to Yogen Fruz for a frozen yogurt outing to celebrate my boss’s birthday. It is the perfect day for frozen yogurt, so I was happy we decided to do that instead of the regular ice cream cake/cheesy poof birthday celebrations that usually go on around here. I got a small nonfat green tea frozen yogurt with mochi.

It was sooo good. I’m telling you, if you like green tea ice cream, check Yogen Fruz’s website to see if there’s one near you. It tastes exactly the same and is nonfat! Soooo good. What are your favorite toppings for fro yo? I love mochi even though it doesn’t have much flavor, the texture does it for me. I also love dark chocolate shavings, raspberries, kiwis, and just about any fruit.

Tonight I have a reception for work that I’m kind of nervous for. There’s an open bar (beer/wine) and passed hors d’oeuvres. After the reception, I may or may not stay for dinner, but I always have a really hard time being good at these types of functions. I usually have a glass of wine (or 3) and all my good intentions go out the window sip by sip. Do you have any tips for staying on track at work receptions where there is alcohol involved?

Hello from BWI

Hey guys! Hope your Wednesday is going well so far. I am currently sitting in the gate waiting to board my flight at BWI airport. I lucked out majorly getting to the airport today because I hit zero traffic even though I left at 8am, prime rush hour time. Since I was going against traffic (out of dc instead of into it) it worked out well.

I made an eggwhite sandwich to take on the road which was the same as I had Monday morning, except no sriracha. I also brought along grapes, an apple, sliced cucumber, and baby carrots for snacks. I ate the breakfast sammie in the car but haven’t had any of the snacks yet. I’m blogging on my phone so ill come back with pictures tonight once I get to Oklahoma City.

I have a long day of traveling ahead of me because I lay over in Atlanta And then have my flight from Atlanta to OKC. Wish me luck!

Crumbled Tempeh Salad

I might start eating breakfast at home more… those pancakes left a smile on my face all morning! To be honest, one of the main reasons I tend to wait until I get to work to eat breakfast is because I figure if I eat at home, I’ll get hungrier for lunch a lot sooner than 12. But I think I enjoy my breakfast and have more fun throwing it together when I make it before work. Today I had those pancakes around 8:15-8:30, and was pretty full until 11:30am or so. I had an apple for a snack around then, and it held me over until 12:30 for lunch, so it worked perfectly.

This was a fuji apple from the farmer’s market yesterday. What a huge difference in flavor this was from the apples I usually get at the grocery store! It was so sweet and crispy and just delicious. Even when I buy organic apples from the grocery store, they don’t come close to this taste. I’m so excited to have 3 more of these!

Lunch was pretty interesting. I threw it together last night before Bikram because I knew I’d be too tired to put it together after I got home. I didn’t know exactly what I was going to make, so I just started throwing some ingredients into the food processor. I added a handful of kale, baby carrots, and 1/2 cup of chickpeas. I pulsed it until it was ground up together, and then I added 1 oz of light feta and 1/2 serving of tempeh, crumbled up. I seasoned it with some salt and pepper, and then let it sit overnight.

I decided to name is Crumbled Tempeh Salad. Though quite random, it was delicious and completely raw. I ate it with some Wasa Crackers.

I just discovered these in my cabinet and had completely forgotten about them. I love wasa crackers because they’re so crunchy and light, and were perfect for scooping up this salad. I also had a Massaged Kale Salad on the side to use up the last of the kale from last week’s farmers market.

Unfortunately, this was a total fail. I must have majorly overdone it with the salt without realizing. I still ate the salad, but it left a bad taste in my mouth. Sad.

After lunch I was craving something sweet, so I went to CVS and picked up some Gummy Bears. But unlike last time, I purchased a single serving bag of gummy bears, so didn’t feel guilty eating the whole thing. 🙂

They compeltely hit the spot without making me feel like I overdid it. I also grabbed a Venti Iced Green Tea from Starbucks.

Which I’m currently drinking as I finish up the last few hours of work for the week! <3 Fridays.

Raw Tempeh

Hiya! Just a quick lunch post so I can get back to work, but I tried raw tempeh for the first time today! I picked this kind up from Trader Joe’s:

This package has 2 servings, but I actually only had 1/2 a serving on my sandwich. There are 240 calories in a serving, 11grams of fat, 9 grams of dietary fiber, and 20g protein. So 1/2 a serving had 120 calories, 5.5g of fat, and 4.5g dietary fiber, and 10g of protein.

My Raw Tempeh Sandwich had:

  • 2 slices whole wheat bread, toasted
  • 1/2 serving of tempeh, sliced thin
  • bed of kale
  • roasted red peppers
  • red pepper coulis (spread on the bread)
  • red onions (microwaved for 1 minute to soften)

I had the sandwich with a side of baby carrots:

Plus some Pirate’s Booty which was sent to me as a sample.

And 3 mandarins for dessert:

Bigger lunch that usual today for me today but I’m seeing if I testing out to see if a bigger lunch will make me less snacky later in the day. The verdict on the raw tempeh sandwich – delicious! Honestly, I barely tasted the tempeh in there but it added a nice texture. I think using it on a sandwich when in a crunch is an awesome vegetarian option in place of lunch meat like I used to have. I was hesitant to eat it raw, but with all the veggies packed on there, I only really noticed the texture. This will definitely be a new lunch staple for me since its so easy and requires no cooking.

The Pirate’s Booty was not my favorite. I love most Pirate’s Booty, but the Sour Cream and Onion flavor just didn’t do it for me. It was kind of sweet, but in a weird way. I’ll just stick with regular or Veggie Booty going forward! The carrots and mandarins were great, though. Can’t go wrong with fresh produce!

I’m thinking about going to Bikram AGAIN tonight!! I realized I left my water bottle there last night, so I have to go back anyways to pick it up. It’s $15 for a drop in class, so I think I’m going to take the plunge and do it. I’ve been thinking about the postures all day and can’t wait until I can improve on them. I think I feel a new (expensive) addiction coming on.
