TGIF! I have been waiting for the weekend alllllll week and it’s finally *almost* here. Yesterday, my boyfriend woke up with an eye infection! Looked like pink eye but he went to the doc and it’s an infection from his contacts, not contagious, but he ended up having to stay home for the day and could barely open his eyes. After work, I went home and we ended up ordering Chinese food for dinner. I had egg drop soup, and then we split the steamed shrimp with mixed veggies and veggie lo mein. It was the first time that I had to really think about ordering vegetarian! I was looking at the other options in the steamed section and thought about doing the chicken with veggies (mostly because it’s cheaper) and also thought about doing wonton soup instead of the egg drop, but then I remembered I’m not eating meat for 40 days! The food was delicious and egg drop soup is my go to anyways, so no big deal.
So far so good today… I had a cup of nonfat yogurt with 1/2 cup of fiber one for breakfast and then a blood orange for a snack. I have a baked potato with black beans, reduced fat mozzarella cheese, and salsa for lunch that I will dive into pretty soon. Tonight a friend is coming over for a healthy date and we’re going to work out and then do mexican night! I have a great, cheap mexican place that does happy hour in my basement and all their apps are 1/2 price and they have really cheap margaritas and beer, but I always go sooo overboard. So, we decided to do our own version. We’re going to make corn tortillas with vegetarian refried beans, brown rice, cheese, salsa, and lettuce, and making the HG margaritas. I made these one time for a dinner party and they are AWESOME and super low point. You basically use diet sprite, lime juice, and crystal light lemonade for the mix and then add tequila… yum yum.
Plans for the rest of the weekend include going to my parents house tomorrow night with the boyfriend. He is a chef so can get great deals on meat and fish, so we ordered Mahi Mahi and littleneck clams to bring. I’m trying to go on a long run in the morning, take a shower, make a healthy breakfast, and then get on the road! We will be coming back on Sunday so just a quick trip, but havent seen the rents since Christmas so it should be nice.
I leave TWO WEEKS from tomorrow for Vieques Island in Puerto Rico, so I am trying to be reallly good about eating and working out until then so that I can be down a few more pounds by the time we leave. SO excited!
Hi and welcome! My name is Beth and I’m a 25 year old living and working in the Washington, DC area. I’ve lost a little over 50 pounds since joining Weight Watchers March 3, 2009. I still have a few to go, but am focusing much more on a healthy, wholesome diet and healthy lifestyle, and less on the numbers. I have taken up running and participated in 5 races in 2009. I have a 5k in February and a 10 miler in April, and hope to find a half marathon to run this year.
