New Recipe: Mexican Wonton Bites

The inspiration for this recipe came from the fact that I was able to purchase wonton skins at Whole Foods for 75 cents! They were on sale for $2, and then with a coupon from Whole Foods for $1.25 off any Nasoya Product, I easily found room for them in my cart. I was planning on holding onto them for a while, but then when I realized they expired today, I knew I had to come up with something fast!


The best part of this recipe besides that it’s so simple and delicious is that it requires just three ingredients, and is totally customizable based on what you have in your kitchen! I wanted to go super simple and just used refried beans and cheese for the filling, but you could easily add corn, ground beef, pepper, onions, or anything else you can think of. The technique remains the same, just make sure whatever you put in them is cooked and/or thawed so everything heats up evenly. Here goes!

Mexican Wonton Bites


    • Prep Time: 5 minutes
    • Cook Time: 15 minutes
    • Entire recipe yields 12 pts+, or 1pt+ per wonton bite



    • 12 wonton skins
    • 1 cup fat-free refried beans
    • 1 oz. shredded part-skim mozzarella
    • Optional: Salsa + Avocado for garnish


First, preheat your oven to 350º. While that is heating, spray a mini-muffin tin with nonstick spray.

Next, press one wonton skin into each muffin cup so that it’s flat on the bottom with the edges poking out.

Place them in the preheated oven for 5 minutes so they get slightly baked and hold their shape. They’ll look something like this after 5 minutes:

Next, spread the 1 cup of refried beans evenly between the shells, which works out to about 1.5 tbsp per wonton.

Then, sprinkle the shredded cheese evenly between the wonton bites.

Last step, pop them back in the oven for 10 more minutes. They are done when the cheese is melted and the edges are browned.

Garnish as desired. I put a dollop of salsa on each one plus spread 30 grams (1 pt+ worth) of avocado among 6 of them.

That plus a nice bowl of veggie soup was a very satisfying 8 pt+ dinner! These heat up nicely the next day too in the toaster, so I had the leftovers at work yesterday with more veggie soup and an orange – so good!

These wonton bites are crispy, creamy, and cheesy, and literally melt in your mouth. So simple and yet so delicious. I’ll definitely be making them again!

    Those look so easy and good! I remember in high school I used to use those wonton wrapper to make crab rangoon at home. Soooo good, but almost *too* good, if you know what I mean.

    Have you heard of the restaurant Nora’s in that area? I was searching around and stumbled on that as a nice place with good reviews, so I was wondering whether you’d been. We are excited about several on the list you proivded – thanks again!

      Ohhh Nora is a GREAT choice. I’ve only been there once, but it was one of the most memorable meals I’ve had in DC… I can’t believe I left it off the list! I had black cod and it literally melted in my mouth. They have several vegetarian options as well.. that would be a great choice for the big dinner!

    Beth, I LOOOOVE this! I bought a package of wonton wrappers that have been sitting in my fridge for months (they might not even be good anymore). The only thing I ever did with them with stuff them with some fruit to make turnovers. I would have never in a million years thought to put them in a muffin tin.
    And with the Mexican flavors?? Love it! If my wrappers are still good, I’m going to try out the muffin tin baking method. It would work well for desserts too I bet. And it would be impressive… a good thing to bring a potluck dinner party next weekend… 🙂

    You always have the best ideas! I have made many of your recipes and this one will be next!

    How are your WW meetings going? I am curious because you have always been my info source when thinking about working for WW. I am working as a receptionist right now and they keep asking me if I want to train as a leader and I am just not sure yet. I definitely don’t want to right now due to my full time job being really busy at the moment. How many meetings do you lead? Is the prep work pretty time intensive?

      Hi Doran! I actually wrote a post about it last week and I have NO idea what happened to it. Overall, meetings are going really well and I am feeling more confident each week. I’ll post a big update next week (which will be my 3rd meeting as the official leader). I only lead one meeting per week, and then work as a receptionist for one meeting per week. That’s about as much as I can tack onto my schedule with my full-time job, blog, and social life! 🙂

    I LOVE working with wonton wrappers…I can only find them in Canada in HUGE packages though so I struggle with using them up once they’re open…I find they work great for dessert too…I made “cannoli cups” with some once. I LOVE this recipe idea…looks yum for one or for party food!

    These looked so yummy I picked up some wrappers to make these for dinner tomorow. I think my kids (ages 3 and 5) will love them. They like anything that looks like a little package that they can stuff and munch on. I will be using some Quorn crumbles and black beans for ours. Great ideas and great blog!

    Beth, I ate the whole batch!! Filled them with organic black refried beans, jalapeno, fat free cheese then topped them with shredded lettuce, diced scallions, tomato, & salsa!! They are so delicious, I could eat them everyday!!
