Mexican Pizza

Mexican food is one of my all time favorite cuisines. There are so many things I love including burritos, nachos, enchiladas, tacos… I could go on. It also happens to be one of my favorite kinds of food to make at home, because it is SO easy to make delicious, fresh, and healthy versions in my own kitchen.

This past Sunday, I made a huge batch of those Black Beans that Will Change Your Life, and have been using them in taco salads, burritos, and rice and beans for lunches and dinners all week. Monday night, I tried a new experiment in the kitchen, and it turned out so great I just had to share!

Mexican Pizza

    • Prep Time: 5 minutes
    • Cook Time: 10 minutes
    • Difficulty: Easy
    • 7 pts+ for entire recipe

Ingredients:

    • Cooking spray
    • 2 corn tortillas
    • 1/2 cup beans of choice (you can use refried, black, pinto, etc)
    • 1 oz. shredded mozz (I used the kind from Trader Joe’s)
    • Toppings of choice:
      • sliced black olives
      • 1 oz. avocado
      • red onion
      • cilantro
    • Salsa

Directions:

First, preheat your oven to 350º.

Next, heat up a pan over medium heat and spray with cooking spray.

Heat up your corn tortillas one by one, spraying each side with cooking spray before flipping.

Once both sides are heated (about 1-2 minutes per side), transfer one tortilla to your baking vehicle. I just used tin foil for this.

If you’re not using refried beans, mash your beans with a fork and heat them for 30 seconds in the microwave. If you’re using plain canned beans, spice them up a little bit with some cumin and/or spices of choice. If you’re using the black beans I used, nothing else is needed.

Next, spread them on the tortilla, keeping them a little away from the edge like so:

Sprinkle with about half of the cheese.

And then top it with the second corn tortilla.

Sprinkle with remaining cheese.

And add your toppings of choice, for me just the olives and red onions at this point.

If I could go back and do it again, I’d add a thin layer of salsa underneath the cheese, so I recommend you do that!

Next, bake it for 10 minutes in the preheated oven, until the cheese is bubbly and melted.

Finally, add fresh toppings of choice – cilantro and avocado for me!

Cut into triangles.

I served mine with a nice serving of salsa for dipping and orange pepper strips on the side, and this was a delicious and super satisfying dinner. I’m not sure how well it would hold up as leftovers, but the same ingredients are very easily turned into a taco salad, which is what I’m having for lunch today! This is super simple, so it’s hard to even call it a recipe, but I think the concept is fun and totally transformable based on your preferences and what’s in your kitchen. Enjoy!

    OK so this looks delicious but the notable thing is that prep plate in the second photo – it’s the cutest thing in the world and I WANT IT.

      Those are actually mini prep plates from Ross. There’s a funny story behind them – a roommate that I lived with for 3 months used some of my dishes to feed her cat (yuck) so she bought me those as a concession and I LOVE them!

    Mexican is my favorite cuisine. I seriously think I could eat Mexican everyday and never get sick of it.

    Mexican is the first that popped into my head, but perhaps the photos above swayed me! My favorite is Mexican dishes that incorporate seafood…yum. Second place would have to be Thai food.

    That looks SO good and so easy! I need to make more of your black beans recipe. I would say Mexican is my favorite, but it’s hard not to overindulge on chips, margs, and the yummy food. I usually leave the restaurant feeling pretty crappy. This is a much better alternative! 🙂

    Mmm this looks yummy! Love Mexican and pizza so it sounds like a perfect combo! I would probably cut back on the beans since my stomach is not so great with them…which is horrible because I love them!!

    This looks really good! What kind of tortillas do you use? I am having an affair with a brand called Abuela – they are fresh and are sooo good!

      I just use the 365 brand from Whole Foods. It’s only 79 cents for a package of organic yellow corn tortillas! One of the steals there. =)

    This looks so good, I can’t wait to try it!! I also absolutely love Mexican food…but I will take any kind of Mexican/Central and South American food. Similar flavors, and all so good! Have you been to Ceiba? Love that place!

    That looks yummy! Mexican food is one of my favorites. But it’s hard to eat often because it’s so unhealthy! I want lots of cheese, guacamole and sour cream!

    Yum, reminds me of a healthy version of Taco Bells Mexican pizza. I love Mexican too, but my fav is Italian.

    LOL I was going to comment on the prep plates as well!! They are soo cute!! 🙂 … I also love love love Mexican food!! I have a really good black bean recipe but mine has Rotello lime and cilantro diced tomatoes!! Sooo good!! I will have to try yours next time I have Mexican (which happens to be tonight; making nachos!).

    Oh, Beth this looks super yummy (and so does the recipe on the link!) I love black beans- I buy them dry in bulk and then soak and cook them as needed. I always end up with way more than I need for one recipe, so I throw a few on salads throughout the week. But- I need to use them for a baking recipe. Have you ever made brownies with them? I’ve seen many recipes for black bean brownies, but haven’t gotten around to making them. I need to!

      I’ve never tried to make brownies with black beans but have heard good things! I’ve also heard of doing chickpea blondies… it kind of skeeves me out but I bet you can’t even taste ’em. These black beans are seasoned really well with garlic, onion, salt, and cilantro, so probably not ideal for brownies, but the plain kind would work well I’m sure!

        You guys should try Dessert Hummus! It tastes just like chocolate chip cookie dough. I usually use graham crackers or fruit as the dipper! 🙂

          Ohhh I’ve heard of dessert hummus but never tried it! It kind of skeeves me out but I bet it would be so good and I’d just have to pretend there wasn’t actually chickpeas in it. =)

    For me: I love Indian, Thai and authentic Italian – none of that Olive Garden nonsense!

    That looks sorta like a panucho or salbute, two dishes from Yucatan. The best way I can describe them as a cross between a gordita, sopes and tostadas. They’re delicious and when I first had them on vacation years ago, it made me realize I needed to know more about Mexican cuisine outside of the regions my family is from. That food is delicious, but there’s so much more to enjoy and a lot of variety you don’t get in restaurants stateside.

    This looks like a great way to use up extras you have laying around the kitchen! I have frozen black beans and tortillas a lot, and this would be a great use for extra herbs, onions, etc. I don’t want to waste!
