Overnight Pumpkin Oats


I always get really jealous when I’m looking at other people’s blogs and see their delicious bowls of oats that look so good you wish you could have theirs instead of what you’re eating. So, last night I decided to make Overnight Oats by the books. I’ve made them before, but I usually use steel cut oats, and with those you have to cook them about half way (15 mins and they normally take 30), and then put them in the fridge overnight.

With true overnight oats, it requires no cooking. I used the Pumpkin Oats recipe from Kath Eats located on this page and they turned out SO good. This is definitely going to be my new go-to breakfast most days of the week because its so easy to throw together the night before and again, requires NO cooking. You use a ratio 1:1:1 of rolled oats, milk, and yogurt (any kind you like). Most recipes I’ve seen use 1/3 or 1/2 cup of each.

Here’s the bowl that I just devoured:

My bowl contained:

  • 1/2 cup of rolled oats
  • 1/2 cup nonfat plain Oikos
  • 1/2 cup light soy milk
  • 1/3 cup canned organic pumpkin
  • 1/2 medium banana, mashed
  • Toppings: 1 crumbled Weetabix biscuit and pumpkin butter

I love this pumpkin butter from Trader Joe’s. It’s not too sweet and adds great flavor to anything you put it on. Plus, heres the ingredient list: Pumpkin, sugar, honey, lemon juice concentrate, spices. It’s always a good sign when you can count all the ingredients on one hand.

And omg, this bowl of oats was sooooooo good. I am so excited I finally tried doing these the right way and know this will be a new staple in my diet. It’s also awesome because you can do so many different flavor combinations with the toppings (see the link above to Kath’s page for more ideas). The other best part is that I am so full, this will definitely tide me over until lunch.

Monday Morning Blahs

How is it already Monday morning!? I love going to visit family, but the weekends just fly by when you travel. Blah. It’s raining and gross outside and is supposed to be like this tomorrow too. Double blah. Buttt… later in the week it says its going to be sunny and in the 80’s… so that is definitely something to look forward to.

Last night we ordered Chinese food, and I got egg drop soup (hot and sour for him) and then we split the steamed jumbo shrimp and veggie moo shi.

I had my soup and some of each of the entrees… love that moo shi veggie! It has cabbage, mushrooms, broccoli, baby corn, water chestnuts, and egg, and its in a sweet-ish sauce (but not too sweet). It comes with pancakes and hoisin sauce… yum. The shrimp and veggies at our chinese restaurant are SO good, too. They shrimp are jumbo instead of those little ones you get from a lot of Chinese restaurants, and the veggies are so fresh and crunchy. After devouring my plate, I went back for a second Moo Shi Veggie pancake… delish.

I am in major need of a grocery for fresh fruit, veggies, yogurt, milk, and a bunch of other things. I wanted to make overnight oats but I had no milk or yogurt, so I whipped up some pumpkin oats this morning instead. I found this at Trader Joe’s:

It has Rye, Barley, Oats, and Wheat and I tried it this morning for the first time. I added ~1/2 a cup of pumpkin when it was done cooking, and then sprinkled some pumpkin pie spice on top.

Though it doesn’t look super appetizing, it really was! These multigrain oats have a really good texture, and I am so happy to have canned pumpkin back in my life. I’m going to try them in overnight oats form if I can convince myself to go out in the rain tonight…

Good news is I am not feeling sore AT ALL from Saturday’s 10 mile run. I didn’t need to take advil yesterday or today and haven’t had any pain, besides the chaffing on my collar bone. When I showered this morning I forgot about it, and I rubbed the towel really hard on my chest while drying off and now its re-opened. 🙁 Ouch. Nothing  a little neosporin can’t fix, I hope…

Back in the District

Hi! I just got back to DC and am happy to be home and relaxing for a few hours before going to sleep! I ended up sleeping in really late today (~10:30am) so had no time for the gym because we had to run to the grocery store and then over to my boyfriends mom house to whip up brunch. We ended up staying up later than planned last night, so I didn’t blame myself for sleeping in.. plus, its Sunday and I ran 10 miles yesterday sooo…

For brunch, we decided to make blueberry pancakes, scrambled eggs, grits, bacon & sausage (not for me), and some fruit. We picked up this awesome pancake and waffle mix

It made really fluffy pancakes, and all we had to do was add water or milk (we used 1/2 and 1/2 and it worked great). I want to try to find this mix at a grocery store around here. I hadn’t had pancakes in so long!

We also got Hodson Mill’s corn grits

Which was also super easy to put together. Just add water, a little butter, and some salt and they are ready in 5 minutes. Here was our spread:

The grits! Here was my plate:

One big blueberry pancake, some fruit, a little scrambled eggs, and a little grits. I also picked up a Chobani strawberry at the grocery store and put it on the pancake and ate the rest out of the cup… my first time trying the Strawberry and I really liked it. I went back for some more fruit an hour or two after but that plate really filled me up! We ended up staying for a few hours just chatting and laying low, and then before we knew it it was 5pm and time to get on the road. Visiting family for a weekend always goes by so fast, doesn’t it?

I had the rest of the dried fruit from yesterday, and some crunchy rice snacks we picked up from the grocery store in the car. We also got some drinks for the road (Sugar-Free Rockstar energy drink and a bottle of water for me) and made awesome time on the way home, even though we hit some traffic. The Droid has an awesome navigation feature where it tracks traffic and tells you how long it will take you to get to your destination factoring in traffic. It shows you where the traffic is and when it’ll be over, so being aware of the traffic pattern made it much more tolerable.

Now we’re home and just ordered some Chinese food… gonna lay low and watch some TV. I’ll check in later. Hope you had an awesome weekend and are recharged and ready for tomorrow!

Double Digits!!!

It’s official – I ran 10.0 miles for the first this morning!! My first time ever crossing into the double digit run category, and it feels SO good. The first two miles were a little rough – it was super cold out and my Garmin took forever to locate the satellites so I was standing outside chilling to the bone while I waited for it to figure out where I was. 😛 My knee was bothering me a little bit during the first two miles, but after that it was smooth sailing. I ran on the Mount Vernon Trail again, but this time went the opposite way from the way I normally go, and the scenery was beautiful! I’ve stopped listening to my ipod while running (mostly because I can’t find the charger for it) so its kind of nice just to pound the pavement and really clear my head. Here’s the proof:

So this run was a lot slower than the pace I usually keep, but I was going pretty slow for the first few miles because I was so cold (it was 34 degrees when I started, but wind chill was 26!) but after I thawed out a bit and warmed up, I was able to pick up the pace. I’m sooooo happy that I’m in the double digits now!! And, excited because I’m not sweating my 10 mile race thats two weeks from tomorrow. 🙂

Pre-run I fueled up with this:

1 Thomas Bagel Thin toasted with 1 tbsp dark chocolate dreams peanut butter and some sliced strawberries. yum! I brought these along for fuel on the run (190 calories)

I ate all but one of them. I liked these.. they kind of remind me of those little gummy coke bottles I used to get at the penny candy store when I was kid (anyone??) but they are a lot bigger than the jelly beans so a little harder to eat while running. I liked the flavor though and would definitely try them again. Post run, you’ll never guess what my body was craving…

A Green Monster! This one was the usual… light soy milk, 4 frozen strawberries, frozen banana, a few frozen pineapple chunks, and lots of spinach. I needed a bit more liquid once I started blending it because it was too thick so the blender was getting stuck, and I had used the last of the milk and had no juice or anything. The only option was water, so I added a little, and it actually worked and you couldn’t even tell there was any water in it. Good to know!

After my GM, my boyfriend threw together breakfast sandwiches for us.

This breakfast sammie has:

  • A toasted arnold thin
  • 1 over easy egg
  • 1 slice of soy cheese
  • Morningstar Farms sausage style crumbles

So good! I love these sausage style crumbles.. they seriously taste like the real thing.

We are off to visit my boyfriends mom for the night so have a few hour car ride ahead of us and will be staying at a hotel tonight. I packed my gym clothes in case I want to go loosen up the morning, but I’m going to play it by ear. I won’t have any internet access so it’s going to be impossible for me to check in, but I’ll be back tomorrow afternoon/early evening.

Good morning and happy Friday!

Last night after work I was wandering towards my friend Steph’s place looking for some quick food to grab, and I saw this placed called the Couscous Cafe on 20th Street NW. The sign outside said Falafel Sandwich and a few other things, and I walked by it, and then turned around and went back to get the falafel that was calling my name. I walked in and told the the guy I’d never been there, and he said I was missing out and made me the best falafel sandwich. It had fresh homemade falafel, hummus, lettuce, and tomatoes in a pita wrap and it came with a salad.. all for $6.99. It was SO good, but then I left my camera at my friend’s house so I can’t show you pictures until later. 🙂

This morning I had a doctors appointment who I hadn’t been to in a year and she didn’t even recognize me! It felt so good to be told by a doctor how much healthier I am and how proud of me she is. When I left the doc’s office, it was POURING. Luckily I had checked the weather this AM and it said chance of rain so I threw my umbrella in my bag, but as I walked to my office, I could feel my shoes getting DRENCHED.

There is literally water pooled in the bottom of these. Thank God for the 5 pairs of shoes that have accumulated under my desk…

On the way to my office, I stopped by Starbucks

A grande extra hot skim latte. I never have lattes (because they are so $$!) but this was a treat (and a reward-to-self for going to the doctor ;)). Once I got to my desk, I threw together a yogurt bowl for breakfast

I found canned organic pumpkin at the grocery store!! i like Libby’s pumpkin the best but cannot find it ANYWHERE so I was so happy when I spotted this in the store on Wednesday. I mixed 1/4 of a cup of pumpkin with 1/2 a cup of nonfat greek yogurt, and threw in some sliced up some strawberries and a Weetabix biscuit. Along with my latte this made for quite a filling breakfast…

And now, onto the good stuff.. the Oikos winner! I used the random number generator at, and pulled #21…

Sunny Again

Happy Hump Day!

Today’s weather prediction for DC is 67º and sunny… woohoo! I am so happy to be over the gloomy days from earlier this week.  I’m gonna give my Garmin another go tonight and I’m sure it’s going to be even more enjoyable in the sun than it was in the cold rain last night!

Breakfast today was not terribly exciting, but it was goooood and packed quite a punch.

A medium DD coffee (with Caramel flavor today) and steel-cut oats from TJ’s.

These are the steel-cut oats that are maple and brown sugar flavor from Trader Joe’s and come cooked and frozen. You just heat it up for 2 minutes in the microwave and tada – you have a fresh bowl of oats! Today I mixed 1/2 cup fiber one right into the oats and it was great. It gave it a nice texture and crunch and I am feeling really full.

I have a busy day at work today because I have a huge meeting tomorrow to get ready for, so hopefully the day will fly by! I’m looking forward to tonight because I have a Health Date with my friend Amber.. more on that later.

Happy Tuesday! I finally got to try the Caramel Oikos for breakfast today and omg it is so good. It is seriously hard to believe this is all natural! The yogurt is so thicky and creamy, and the caramel so gooey, its an awesome balance.

I sliced up a Fuji Apple and dipped it into the yogurt and it was delicious. Want to lick the container clean so I don’t miss any sort of good. I was hungry when I woke up today (again) so I actually ate breakfast at home for a change, but I have a juicy pear to eat when I get hungry again.

Gloomy Monday Morning

Today is a rainy, gloomy day here in DC, which I guess is making me feel a little bit better about being stuck in an office. This morning I woke up feeling really good and well rested… I think sleeping in both mornings this weekend really left me refreshed! I had such a nice weekend enjoying the gorgeous weather outside so it’s always a little depressing when it comes to an end..

I started off today with a MEDIUM coffee, first try at this size so we’ll see how it goes.

On the metro ride in, I was reading Women’s Health Magazine (one of the few magazines I have subscriptions to… if you haven’t read this one, you should. It’s really informative and has a ton of great food and workout ideas, but its also filled with tons of other interested info, weight loss success stories, cool articles, etc.) There was a Q&A in the “The Doctor is In” section that grabbed my attention.

Q: If I don’t have my morning coffee before 9am, I get a pounding headache. Why?

A: You’re most likely hooked on the caffeine and experience withdrawal. Typically, the throbbing kicks in about 12 to 14 hours after you’ve had your last cup, so if you guzzle after-dinner java, you’ll be feeling the pain the next morning. This also explains why some people get early-evening headaches. Recent studies suggest that a moderate amount of daily caffeine (up to three small coffees, or 400 milligrams a day) can have a positive effect on your overall health – for example, reducing the risks for diabetes, Parkinson’s, and liver disease. But too much of the stimulant can bring on nasty headaches, as well as long-term insomnia and increased heart rate.

I thought that was really interesting, and made me feel a bit less bad about my caffeine addiction. I am happy to report that I haven’t had a headache since last weekend even though I have ranged from having one mug of coffee at home up to a venti Americano from Starbucks throughout the week. I think the headaches were a combination of getting over a headcold plus the caffeine withdrawal, but I’m just feeling less bad about my habit.

For breakfast, I had some cut up strawberries

and an Oikos Honey Greek Yogurt.

Oikos is definitely one of my favorite Greek yogurts. This is made by Stonyfield Organic, which has a reputation for making delicious organic There is honey on the bottom of this kind and it’s so thicky and creamy. The ingredient list is organic milk, organic honey, organic sugar, pectin, and organic carbob bean gum. I love short ingredient lists, especially when flavor isn’t sacrificed, and this stuff is SO good.

Lazy Sunday

Laziness got the best of us this morning so we decided just to stay at home today instead of drive back out to Tysons. Spring is officially here, so some spring cleaning was in order. Not the most fun way to spend your Sunday morning, but I definitely feel better and more relaxed in a clean apartment, and sometimes you just gotta do it!

I woke up really hungry today… I’m sure that has something (everything) to do with yesterdays 9.8 miles! I wanted to make a GM, but I realized I was out of bananas so decided to wait until later. I was craving another yogurt bowl, so I threw a different combo together for breakfast.

This bowl has:

  • ~ 1/2 cup nonfat greek yogurt
  • 2 small kiwis, sliced
  • 1 small plum, chopped
  • 2 weetabix biscuits
  • ~1 tbsp almond butter

Great combo. Have you tried these Weetabix biscuits? They are really good and crunchy, but don’t have too too much flavor. I ended up breaking them up and mixing them with the almond butter so it was kind of like almond butter granola-esque and was really tasty and crunchy. Yum! And, I got to eat this delicious breakfast outside on my balcony this morning – first meal out there of the year! That might have had something to do with the fact that today was the first day I cleaned the table out there this year…. but thats a whole nother story 😉

Good news is that I am way less sore today than I thought I’d be. My left knee definitely hurts a bit when I bend down but other than that I’m in good shape. I’m trying to figure out what I should do for a training plan until the 10 miler now that I have a 9.8 mile race under my belt… any ideas?? The original plan was to do 8 next weekend and 9 the weekend after, and then try to do 2 shorter runs (4-5 miles) during the week days. But now, I don’t really want to lose the mileage so I’m trying to figure out what the best way to train for it.

Such a gorgeous day out so I might try to go for a walk, maybe throw the ball around. I also need to run to the grocery store for a few things. Be back later.
