Time to Regroup

Today is the first day I’ve had off in two weeks since I worked through last weekend at the conference in Columbus. I was so looking forward to sleeping in and not setting an alarm for the first time in 15 days… but at 5:10 am Wil’s alarm went off because he accidentally set it and I woke up for about an hour and a half before I could fall back asleep. Boo.

I feel like I’ve gotten pretty off track since my half marathon. Granted, I’ve had a lot going on in my personal life as well as my work life, but excuses are excuses, and it’s important for me to focus on myself a bit even when a lot of other things are going on. You’ve probably noticed that I haven’t written about working out in some time… that’s because I took 10 full days off from any form of exercise! I can’t even tell you the last time I went that long without working out, and it didn’t feel very good. It hung over my head almost daily, but I just couldn’t get it together to go to the gym. I was working almost 17 hour days in Columbus and then just exhausted when I got back and had to go grocery shopping, clean, unpack, laundry, etc, etc.

On top of the lack of exercise, I’ve been really lax with eating junk and drinking, and I think all three go very hand-in-hand for me. I’m not saying I haven’t had fun or enjoyed myself with it, I’ve just been feeling kind of gross lately for lack of a better word. Last night after work I went for a drink with my coworker Emily at Bar Dupont. They had an awesome drink menu with cocktails that are normally $11 priced at just $5 for happy hour from 4-6.

I went with the Alan’s Love, which had Smirnoff Pear Vodka, St. Germaine, Honey, Muddled Cucumber, and Lime.

It was AWESOME. Perfect level of sweetness for me and had a nice fresh taste from the cucumber and lime. We were served some bar snacks:

Mixed Nuts, Wasabi Peas, and Corn Nuts. Perfect crunch to go with the drink. We also ordered a flatbread to share.

With fig jam as the sauce, gorgonzola, dried figs, and arugula. SO good. Figs twice in one day is fine by me! 🙂

After Bar Dupont, we ventured over my friend Jess and Amy’s new apartment and had a few more drinks and snacks. We also played dress up…

Amy, Me, and Jess. They have a chest full of costumes and we went a little crazy with it… I have a flapper wig on, a hula skirt, and a sequenced tube top over my clothes. Ha. ‘Twas a fun night!

But I woke up today feeling like I really needed to get it together and start taking care of myself better. I started out by making a delicious breakfast with potato hash and an egg. I started with a potato, a green pepper, and an onion…

I chopped up half the potato

And then nuked it with some water for 3 minutes to cook it. While that was going, I chopped up half the pepper and a chunk of onion.

And then added the onion, 1 tsp of olive oil, and 1 clove of garlic to a pan. After a minute, I tossed in the pepper too.

Once that was going for 3-4 minutes and the onion and pepper were getting soft, I tossed the cooked potatoes into the mix…

And cooked it for one more minute. I cracked an egg directly on top of the potato hash…

Added a little veggie stock to create some steam, and covered the pan until the egg white was cooked through.

Carefully transfered it to a bowl, and voila!

I also had a toasted Bagel Thin on the side.

To help soak up the perfectly cooked yolk…

So good. (FYI – this whole bowl was 4 points on WW, plus 1 for the bagel thin, for a total of 5. 1/2 potato = 1, 1 tsp olive oil = 1, egg = 2, bagel thin = 1)

After that, I went on an amazing bike ride and it felt sooooo good. My goal was to keep all the miles under 5:00 minutes, and I discovered this 11 mile loop the last time I went biking (11 days ago…) that I went for again. Here are the stats:

It is an absolutely gorgeous day in DC – around 70 degrees, sunny, and clear. It felt so nice to be outside and work up a sweat. I don’t know WHY I let myself go so long without exercise because its one thing that always makes me feel good.  My plan for the rest of the day is to try to hit up Bikram at 4 because that always helps me get back into a healthy mindset and sweat it out big time, and then laying low. I am really enjoying the relaxation factor this weekend is bringing, and really need to take some time for me. I’m also going to try to lay off drinking because I much prefer waking up feeling refreshed, rather than with a headache. It’s just so hard when if you want to hang out with friends, all there is to do is drink! Argh.

Office Party Recap

Hey! Happy Thursday slash almost Friday to ya. I am so happy we’re in the latter part of this week because I have NO PLANS for this weekend. Well, that’s not true. I have a 5k at 8pm on Saturday night that I’m looking forward to, but no plans to travel – – just staying put! I love weekends like that. 🙂

Yesterday the party was fuuun. We held it in our conference room yesterday afternoon and had a nice little spread of appetizers:

Chips and 6 Layer Dip, Shrimp Cocktail, and a Veggie Tray. In case you didn’t see the last two well:

A veggie tray (from Costco!) with ranch dip. After the party I looked and realized it was Low-Fat Peppercorn Ranch dip which made me feel better about having eaten a lot of it.

In terms of staying on track, I did OK at the party with eating/drinking. I didn’t have any beer or wine, and stuck with this:

(It helps when you appoint yourself to be the one to pick up the non alcoholic beverages!)

I also ate mostly veggies and the shrimp, but I ate wayyyyyy too much. I did have some chips and dip as well, but I just kept piling on more veggies and more shrimp, and I left feeling really really full and bloated. The pros were that I didn’t have any alcohol or birthday cake, and focused on eating more shrimp/veggies than chips and dip, but if I had just had a few less shrimp, I would have left the party with an A. Instead I got a B. 😉

I made it to a 7:30pm Bikram class last night with my friend Amber, and it felt really good to sweat! I am definitely feeling a bit sore today, but I really enjoyed the class last night and am finding going once a week is working well for now. I made myself a smoothie before going to Bikram and left it in the freezer for 3 hours. Having a smoothie in the freezer to look forward to post workout is new for me, but seriously amazing. It gives me motivation to get through my workout and its the perfect post workout treat!

This smoothie had 1 cup light soy milk (1 pt) + 1 medium frozen banana (1.5 pts) + 4 frozen strawberries (.5 pts) + 2 big handfuls of spinach (0 pts). I ate it up after Bikram and it was perfect. Normally I would have had something else to eat but I had so much food at the party that I wasn’t even hungry after the smoothie and slept like a baby afterwards.

Breakfast this morning was quick and delicious. I took 1 cup of leftover succotash from Sunday night (last day to eat it!) and heated it up in a pan, and then added 1/2 cup egg whites and made a scramble. I put a few slices of basil on top for garnish/fresh flavor, plus a piece of whole wheat toast.

Succotash (2 pts) + Egg Whites (1 pt) + Whole Wheat Toast (1 pt) = 4 pts total.

Brunch for One

Happy Saturday!! I love weekends where no travel is involved… so relaxing. Unfortunately, I woke up to this:

Which put a major damper on my plans to lounge by the pool all day… Better things are in store though!

Last night I got home and had a package from Amazon.com, which had my gift from my birthday gift from my sisters!

A Camelbak!! I’ve been wanting one of these for a while now because I hate holding a water bottle when I run, and my water belt can be a little much for shorter runs. But in the intense heat, water is necessary on any length run for me, so I couldn’t wait to get out and use it! I decided to go for a run even though it was SO hot last night, so I did a walk/run instead which seems to be my new thing. I ran for 4.25 miles, and walked just over 1 mile. I took .25 mile walking breaks 4 times during the run, so the longest stretch of running straight was 1.5 miles. I LOVED having my Camelbak because I didn’t have to worry about conserving water as I do when I carry a bottle, and it felt so light on my back I could barely tell it was there. My Garmin says I burned 575 calories.. woohoo!

I should have planned better with my post run eats, becuase I had a peach and then just couldn’t think of what else I wanted, so I ended up grazing and just eating a bunch of stuff instead of a good, solid meal. I had an almond butter sandwich on wheat, lots of Dr. Krackers, and a bowl of Special K with soy milk. It doesn’t sound like much, but it was actually a lot and basically all carbs rather than having a balanced meal. Mental note to plan better for meals post workouts because I always end up grazing and eat too much when I don’t plan well.

After seeing the gloom today, I decided to make myself brunch for one. I wanted eggs and pancakes, so I figured why not have both!? I made two mini protein pancakes, which were 2 points combined, with 1 tbsp pancake mix, 1/2 scoop protein powder, and 1 tbsp each of light soy milk and egg whites.

Then I sauteed a green onion with kale over nonstick spray (0 pts) and put a fried egg (2 pts) on top of it.

Then, for good measure, I had a small peach and an apricot (1 pt) from my farm share.

This whole plate of goodness for only 5 points!

It really hit the spot!

What are you plans for today? Is it rainy/gloomy where you are? I’m going to get my nails done with two of my girls, Lianne and Rachel, and then going to a 4pm Bikram class with them. It will be Rachel’s first Bikram class ever so I am so excited for her. After that, we have the celebration for Lianne and my birthdays tonight, where we’re going out to a fancy dinner and then out to a few bars. I’ll be back tomorrow with a recap!

Hello! I hope you’re enjoying the long weekend so far… I know I am! 🙂

Friday night turned out to be SO fun. I made it to a 4pm Bikram class, and then met my friend Jess for an I Love the 90’s screening of Don’t Tell Mom the Babysitter’s Dead outside in Rosslyn. There were tons of people with blankets and picnics ready to go starting around 7pm.

They had a few games where you could win a free I Love the 90’s t-shirt.

Cheese, crackers, pita chips, hummus, carrots, grape tomatoes, and Hot Tamales. We also drank some white wine while the moving was playing. It was so funny to watch because I hadn’t seen it in years and years, so I was definitely pre-work world when I saw it. I remember thinking that she was SO cool and so old and having no idea what they were talking about with pension plans and health insurance… so funny to see it from the other side!

Yesterday was a really relaxing day. I spent several hours out by the pool and got a mani/pedi which was so nice. I did Level 1 of the Shred for exercise… it had been months since I’ve done it last and it is HARD. I am so sore today, but sore in a good way. 🙂 I was really on track with eating yesterday and ended up going out to dinner with the boyfriend while we ran around and hit up Target and TJ Maxx, two of my favorites. I woke up today and could hardly believe it was Sunday, but luckily we have tomorrow off, too!

We went to a dinner to grab breakfast, so I ordered a veggie eggwhite omelette with rye toast.

And I asked for fruit instead of potatoes, which they did no problem.

The fruit was actually really fresh which was sort of surprising… I feel like a lot of times the fruit at dinners can be questionable, but this was delicious!

What are your plans for the 4th? I have two picnics to go to, the second of which will be on a roof to watch the DC fireworks! I’m so excited. I’ll be back with a recap tomorrow!

Crabby

Hiya! Sorry for not coming back yesterday, but blogging from my phone is kind of difficult because it takes so long to type! I had a pretty good day yesterday because some of my coworkers arrived in OKC so I had some friends instead of being on my own. It was a looong day, but a good one. The course wrapped up and went really well, and then I helped with a few other things and took a tour of the hotel where the rest of our conference is going to be held.

For dinner, we decided to go out to a seafood restaurant and it ended up being so fun! They had tons of different kinds of fresh fish, and we ended up getting this feast where we each got steamed snow crab legs, shrimp, corn on the cob, potatoes, and andouille sausage (I gave mine away). They put brown paper down on the table and then dumped the buckets down in the middle. It was so fun!! I love eating with my hands and getting messy (on occasion). The food was delicious! I loooove crab legs and hadn’t had them in so long. Plus the shrimp, corn and potatoes were delicious, too. They boiled everything together so there was also onions and different spices, so everything was super flavorful.

After dinner, we ended up walking around Bricktown a bit more and then stopping for frozen yogurt again. I forgot to take a picture, but I got cookies and cream fro yo and topped it with snickers and cookie dough. Definitely delicious, but not the healthiest. I left feeling really full from dinner and the fro yo, and a little bit sick to my stomach even though everything was good, I just ate too much of it!

This morning started EARLY and my alarm went off at 5:30am (ouch!). There’s a huge exam going on so it’s pretty low key since i”m not actually taking the exam, just have to stand by and make sure everything goes well. I went to the breakfast buffet again and got the same thing I had yesterday – a veggie eggwhite omelet with fresh fruit and skim milk. Having the stabilizing breakfast also helped my stomach feel a bit better even though I woke up at the crack of dawn. Coffee has been flowing as well, as I’m sure you can imagine.

So yesterday felt a bit indulgent with the big dinner + candy covered frozen yogurt, so I’m counting that as my splurge day for the week. I had a healthy breakfast and plan to try to be mindful for the rest of my trip. I’m not sure if I’ll be able to squeeze in another workout, but I’m going to try to get one in either later today or tomorrow. The days are just so busy that its going to be tough.

Party Time

Today has been such a fun day but I am so sad this day and the weekend in general are wrapping up! Yesterday was a bunch of running around doing errands to get ready for the party, and all day today was cooking, cleaning, picking up some last minute things, and then having people over! We had about 15 people total (including us) and Wil cooked up a storm. I had a stabilizing and light breakfast because I knew there’d be heavy eating later in the day, but didn’t want to NOT eat so that I overate when the party started.

This was 2 egg whites microwaved into a puff on an arnold thin with some melted cheddar, a little sriracha, and half a banana sliced on the side. I just poured the egg whites into a bowl that I had sprayed with nonstick spray and then microwaved them for 1 minute and it puffed up into the perfect size for a sandwich.

Then, we got geared up for the party, which started around 1pm. Here’s a peek at the buffet:

Grilled Veggies + Fried Chicken. Wil made the fried chicken by marinating it overnight and then frying it in a wok of oil and then finishing it in the oven. I didn’t have any, but heard it was incredible!

And that is the grilled veggie plater up close. It had eggplant, yellow squash, zucchini, and roasted red peppers, plus some olives. We grilled the veggies last night in balsamic vinaigrette and then shaved some romano cheese over them today.

Cucumber Salad, Potato Salad, and Homemade Biscuits.

The cucumber salad just had cucumbers and red onions, and was marinated in white vinegar, a little sugar, and some salt. It was very tasty and light and so easy to throw together, too. The potato salad was incredible, but not so light. It had olive oil mayo, olive oil, apple cider vinegar, salt, pepper, dill, and mustard. It was sooo good, but I tried to go easy on that and heavier on the cucumber salad.

After I took pics of the buffet, blackened shrimp was added for those of who don’t eat chicken. I bought blackening spice and just coated the shrimp in it and then seared it on a flat grill pan with a little butter. Here’s a picture of my plate:

Some blackened shrimp, cucumber salad, grilled veggies, potato salad, and a biscuit. I definitely had some more shrimp, veggies, and cucumber salad, and maybe another biscuit or two. All of the food was soooo good, and the company even better. We spent some time at the pool and the weather was PERFECT. Clear, sunny, and not at all humid.

I’m so sad this weekend is over because I have such a busy day ahead. Tomorrow is my only day in the office, and then Wednesday I am flying to Oklahoma City for a conference. I always struggle with being healthy on conferences, but I really want to do well because I feel like I’ve been slacking a bit on healthy eating/exercise. During this whole weekend, I only worked out one time (Bikram on Sunday) and usually weekends are when I get the most working out in.

I’m going to try to get a workout in tomorrow while also getting ready for my business trip, and then hopefully get a few workouts in while I’m in OKC. Once I get back from OKC, I’m in full fledged get-to-goal weight mode because I really need to lose these last few pounds and get to goal so I can become lifetime and stop paying for Weight Watchers. I’ll probably be eating a lot stricter and posting points for a lot of my recipes, which I don’t usually do. I’ve been more in maintenance mode for the last few months, but the truth is I still have a few pounds left to go and I really need to start crackin’!

What was the highlight of your Memorial Day weekend? For me, definitely today’s party! It was so fun and nice to spend time with friends eating good food and in the sun.

Today is amazing outside!! Oh my gosh. It is almost 90 degrees but dry, sunny, and amazing. Take a look at the view from my balcony. First, our pool:

Today started with a 9am Bikram class that felt SO good. I really think the 2x a week idea is perfect for me. I woke up at 8am and went right away without eating, because they tell you not to eat right before you go and I wasn’t about to wake up too much before 8am on a Sunday! 🙂 I did drink a big glass of water before I went and then drank 2 bottles of ice water during the class. I had a new instructor today and he was amazing. He explained a few of the postures and did demonstrations of one’s I’ve never had broken down before so I got some awesome pointers from him. It was a great way to start the day and left me feeling cleansed, energized, and HUNGRY.

I got home and immediately ate a piece of toast with some Crofter’s Europe.

Then the boyfriend made us breakfast while I took a shower and cleaned up a little bit. There was an awesome ingredient today that I’ve never heard of before – Garlic Sprouts. Here is what they look like:

Garlic sprouts, also known as green garlic, spring garlic, young garlic, and baby garlic is immature garlic that hasn’t yet developed the garlic bulb that we typically think of when picturing garlic. They are about the thickness of green beans, but a lot longer and curly, as you can see. They are crisp and very similar to texture to green beans, but have a very potent garlic taste. I saw them at the Farmer’s Market on Thursday and had never seen them before, so I picked up a bag of them after having a taste. Just a tiny little bite BURSTS with garlic flavor, so these are definitely not for people who don’t love love love garlic like I do!

To use these today, we just chopped up a few since they’re so strong and added them to the white potatoes (also from the Farmer’s Market) to make a hash. I requested an egg white omelet (he had regular eggs) and we used corn (cut off the cob, not frozen for once), green onion, and a little more of the garlic sprouts for filling in the omelets, plus he had provolone but I did mine cheese-free.

Garnished with some of the veggie filling and some microgreens. He also had some toast but since I had the bread right after Bikram, I didn’t have more. I added some Sriracha to my omelet.

I also sliced up an apple that was meant for sharing, but I ended up eating it all.

An awesome meal and start to the day! I haven’t had an omelet in ages even though I eat eggs a lot, and this one was delicious.

We are having a Memorial Day gathering tomorrow (I’d say party but there aren’t too many people coming…) so we have to do some errands today to get ready as well as clean up the apartment. Hopefully I’ll still be able to soak up some sun and get everything done.

Have you ever tried garlic sprouts? What is the most unique ingredient you’ve ever found and cooked with? Or do you shy away from that stuff and just stick to what you know?

College Again?

Today has been a little bit of a slow start after last night’s festivities. It was a fun night and celebrating was in order because one of my best friends graduated from law school yesterday!! Let’s rewind a bit, shall we?

After work, I came home and made a quick snack to tide me over.

Almond Butter + Crofters Europe on Whole Wheat Potato Bread with a glass of Almond Milk. Then I went and got a pedicure since the pool opens this weekend, plus my eyebrows done. It was fun and while getting my toes done, I finished reading Harvesting the Heart by Jodi Picoult. This book was pretty slow to start and took me a while to get into, but then it got really good and I couldn’t put it down about half way through. She’s one of my favorite authors and I’d never even heard of this book, but I found it in my Community Book Room.

After that, the boyfriend and I went and got a bite to eat at Hamlet, a bar/restaurant close to our apartment. I had a few glasses of wine, and got a fire roasted artichoke to start.

I shared, but probably ate about 2/3 of this. It was pretty good but I would have liked it to be cooked a bit more so the edible parts were a little softer. I also ordered a half salad:

Which was pretty big for a half size! It had greens, candied pecans, cashews, dried cranberries, tomatoes, avocado, and goat cheese. I ordered the dressing on the side but didn’t use it because there was a lot going on in the salad as it was. It was delish! The only problem was it had chicken in it and I didn’t realize it until it came out the first time, so I had to send it back.

After that, I went and met the new JD in DC for some drinks at Madhatter. It was a lot of fun and I felt like I was in college again – not getting home until after 2am! I can’t even tell you the last time I was out that late. It felt like being back in college! Here’s a pic of us girls at the bar:

Since I got home so late, I slept later than I have in years – until almost 12!! I woke up earlier than that but wasn’t feeling so hot so made myself go back to sleep and when I woke up for the final time I was feeling pretty good. I decided to have a stabilizing breakfast (slash lunch) which was actually delicious.

I pan fried an egg and melted some cheese on top, and then placed it on a bed of microgreens for an egg sandwich.

It was on Whole Wheat Potato Bread and reallly hit the spot.

I also had a sliced up apple to go with the egg sandwich.

Yum. I have been slacking a lot on cooking lately but I’m hoping to get back into it this weekend. I am so excited to have 3 days off and my boyfriend actually has the whole weekend off too! Not sure exactly what today will bring, but we might go thriftin’, shop for a few more plants, and get geared up for a little Memorial Day Party that we’re having on Monday with some friends by the pool. Today is kind of gloomy and overcast, but tomorrow and Monday are supposed to be really hot and sunny, so hopefully I’ll log some hours by the pool. 🙂

Office Breakfast Success

Morning/almost afternoon! 🙂

Today’s office breakfast went great. Last night after work, Kelly and I went shopping to pick up a bunch of things to cook at the office, and then we ordered some food from Corner Bakery that was catered. The catered food came at 9am today, so we set it up in the conference room.

We had a huge fruit tray with pineapple, melon, oranges, grapes, kiwi and strawberries, and then two trays of muffins, bagels, pastries, cinnamon rolls, and various other breakfast treats. We also had two containers of coffee delivered along with the food.

Then, we got to cooking! We have an in office griddle, and then a few other people brought griddles and George Formans. We scrambled up a bunch of eggs

We ended up leaving a griddle hot for people to cook their own eggs if they wanted them fried or any way other than scrambled, but everyone just went for the scrambled so we cooked up the rest of the eggs half way through breakfast. Everyone really enjoyed themselves and almost every single person in the office came to eat in the conference room! Here’s the buffet in action:

I was the only person to fry their own egg, but I like to stand out from the crowd. 😉 Here was my first plate:

1 fried egg, 2 pieces of veggie sausage, 1/2 whole wheat bagel, and lots of fruit. I definitely went back and had the other half of the bagel and more fruit, and a few bites of the other treats while cleaning up. Overall the breakfast was quite a success! We normally do happy hours for our social committee events so the in-office breakfast was a nice change of pace. I think next time we will not get the catered food and will just go with cook your own because the catered food costs so much and it was actually really fun doing all the cooking! We can easily pick up bagels, muffins, and other treats to supplement the eggs/bacon/sausage, and pay far less than what we did today. 🙂

Work events can make it really hard to stay on track with healthy eating because you generally don’t have too much control over what is there and its just so easy to go back for seconds, thirds, etc. Here are some tips that I try to use when navigating an office event:

1.) Be on the planning committee if possible! This one worked especially well for today because I sort of took the lead on ordering the food/picking out the groceries. This meant that we had plenty of fresh fruit, veggie sausage (!), and other healthy things to choose from.

2.) Do a round before you make your plate – I try to do this anytime I am at a buffet so that I can see everything there is to pick from before I choose what I’m going to have. If I start from the beginning and just grab everything that looks good, I end up with way too much food on my plate. This way you can pick the treats you want to have but focus on getting mostly good stuff loaded up on your plate.

3.) Sit away from the buffet table – It’s too easy to turn around and pile more food on your plate if you’re sitting/standing near the source of food. If you put yourself away from it, you can still go back for seconds, but it takes a little bit more thought/planning to do so.

4.) Sit near people you like! Ha. This one seems like something you’d probably do for other reasons, but I find that I always do a lot more talking and a little less eating when I’m engaged in conversation with people. Plus, if you’re in a deep convo with people you’re less likely to jump up to head back to food.

5.) Plan ahead – Realize that in all likelihood, you are going to eat more at that meal than you normally will. Plan your day accordingly. For example, today I packed a pretty light lunch because I knew I’d be eating a lot at breakfast, and plan to go for a run after work to balance it all out.

6.) Have a treat – If you try to be too good, you’re going to crack. I don’t normally have bagels because even though I love them, they don’t really fill me up and they’re pretty dense calorie wise for not leaving me full. But today, I let myself have a bagel because I knew I’d probably eat a cinnamon bun, a sweet crisp (whatever that was) and various other pastries if I tried too hard to limit myself. How Do You Take ‘Em?

I think my body really enjoyed yesterday’s leisurely morning because today I woke up before my alarm went off (around 7:20 which I know is considered late to some) and I was wide awake! I got out of bed and had time to make a nice breakfast, watch the Today show, drink a cup of coffee, fold a load of laundry, get ready, and pack my lunch before work! My normal morning routine is more like get out of bed, get ready as quickly as possible, grab my breakfast/lunch out of the fridge, and hurry to the metro. I am really enjoying getting up a little earlier and having a lot more time for me in the mornings.

I’m also glad to report that I am feeling a lot better this morning. Soreness wise (from Saturday’s shenanigans) I am feeling 95% better, and sick-wise, 75%. Those numbers are a bit arbitrary, but point is I am feeling a lot better today. I am so glad I took it easy yesterday.

Breakfast today was simple, but delicious. Ever seen one of these before?

It kind of looks like a pear, but it’s actually a Champagne Mango. It’s similar to a regular mango, but is smaller in size and the flesh is less fibrous (doesn’t get stuck in your teeth as much!) I’d never seen these before, but I found them on the grocery store (on sale!) so I picked one up to try and had it today with breakfast. It was delicious! I love mango and this was pretty sweet and juicy, and not stringy like larger mangos can sometimes be. The seed is the same as a larger mango, thin down the middle of the fruit.

I made two eggs over easy, and had each one on top of a toasted piece of Martin’s Whole Wheat Potato Bread (my new fav). I also scored the mango and had that on the side.

This was an awesome breakfast, albeit simple. As you probably know by now, I love love love eggs, and sometimes simple is best when it comes to breakfast!

What’s your favorite way to eat eggs? Or, if you’re not an egg lover, what’s your favorite breakfast? My absolute favorite way to have eggs is poached, but over easy is a close second. As long as the yolk is super runny, I am good.
