BBQ Chicken Pita Pizza

I could eat pizza for every meal of every day and die happy. Just had to get that out there.

Recently, I’ve been really into making personal pizzas where I can eat the whole thing for a filling meal with a reasonable amount of PointsPlus. I had some leftover chicken in the fridge and came up with this idea of BBQ Chicken Pita Pizza and it turned out AWESOME.

BBQ Chicken Pita Pizza

    • Prep time: 5 minutes
    • Cook time: 15 minutes
    • PointsPlus Value: 8

Ingredients:

    • 1 large Whole Wheat Pita
    • 2 oz. diced chicken
    • 2 tbsp BBQ sauce
    • 1 oz. Mozzarella
    • Red Onion
    • Cilantro for Garnish

To start, preheat your oven to 425º.

While that’s heating up, add the BBQ sauce to the chicken and mix well to combine.

Spread the chicken over the pita as the base layer.

Next comes the cheese. I found this brand at Trader Joe’s:

And you get 3 mini balls for 2 pts+.

Slice those up and spread them out over the chicken.

And then sprinkle on red onions to taste. I love ‘em but you might want to use a few less if you’re not a huge fan.

Pop the pita in the oven for 15 minutes, until the cheese is bubbly and melted, the crust is crispy, and the chicken is heated through.

Last addition – sprinkle the cilantro on top.

And then slice and eat!

Sooooooo good. I might make this again tonight!

I looove white pizza. I am not that into red sauce on pizza, so that might be why I love this one so much too!

White pizza is my favorite, too. I may have to start making my own since the rest of my family loves their sauce! I also love Vodka Pizza from this local pizzaria. It’s too good so we only get it once in a blue moon. Must try this chicken pizza now!

I was in Phoenix for work last week, and I had the most delish pizza – Thai Chicken pizza WITH jalapenos – seriously amazing. The jalapenos added the extra OMG. But I also could do pizza any night. I made homemade calzones with TJ whole wheat crust the other night. The PotintsPlus were HIGH (like probably most of your daily allowance!) but lucky for me, I had plenty left. Will probably have to cut that portion in half in the future! :)

That sounds incredible!! And I know – it’s so annoying how many Pts+ are in regular pizza dough. That’s most of why I try to find substitutes for the crust that work and these pitas from TJ’s are really good!

I love homemade ‘pita’ pizza as well! it’s so quick and easy to make. I usually top mine with turkey meat, shredded cheese, onions, tomatoes and LOTS of oregano :D I also like to throw some raw spinach or arugula on top after the pizza is baked.

That looks really good! I love making pizza, but I have never tried a bbq chicken one yet. I like the addition of the red onions.

My favorite pizza is buffalo chicken, yummy!

I can honestly say I have never had a BBQ chicken pizza nor have I thought it sounded good, LOL. But it looks so good, I’m going to have to give it a try. :)

Amen to eating pizza every day! I am so making this tomorrow. Also I’m now wondering why pita bread is round in the US but oval shaped here in the UK? Such a random little difference!

I can honestly say I’ve never met a pizza I couldn’t eat a slice or two of, but white sauce or BBQ are definite faves. This looks delicious!

This might be a silly question but how did you prepare the leftover chicken you had? I don’t have much luck making chicken at home and I need to find a good way to have some on hand to use in dishes throughout the week. Thanks for any advice!

No such thing as silly! I am no expert on prepping chicken either. I usually bake it at 350 for 10 minutes, then flip and cook for another 10 minutes if I’m using tenders. After the 20 minutes, i’ll cut one in half to make sure it’s fully cooked. If not, I’ll throw it back in. For breasts, it’s more like 15 minutes before flipping. I’ve also cooked them in a pan before and do the cut-test to make sure it’s cooked through!

Holy yum! That looks delicious! I make something similar with a tortilla, but I think a pita would be a better foundation.

I love making pizza at home with a Publix bakery pizza dough ball. Buffalo Chicken is my favorite. :)

Yup- when asked what my favorite food is, I’d say pizza! And that’s SUCH an open-ended statement, since there are millions of combinations for pizza. But, I’m totally a marinara/red sauce girl. The more the better! Tons of veggies, different cheeses (and WHOLE MILK mozzarella)… yum.
We make pizza every single Friday night at home- which is always something to look forward to!

@Monica – I cook chicken breasts in the crockpot over night just in chicken broth (if I want to be able to play with it all week) shred in the a.m. and pull from that ALL week…do it ALL the time!

Hi Kimberly! Thank you for your comment. I really miss having the time to post every day! I’ve been stretched so thin lately between my day job, my ww meetings, traveling every weekend, and life in general, so the blog has been the one thing I’ve been able to back burner. I’ll try to get better about it though!

Hi Sally! Thanks for the feedback. I am hoping to be back up and running with regular posts next week and promise to do a menu plan! I’ve been traveling every single weekend and my day job has been crazy, so it’s been really tough lately to keep up with everything!

There’s something about pizza that always makes me want to eat the whole thing, one slice is never enough :P I love pita pizzas just for that reason- perfect portion size! I used to love CPK’s BBQ chicken pizza!
