Did you know that I barely dabbled in the kitchen pre-Weight Watchers? It’s funny because people come to my blog a lot just for the recipes (which I’ve got to get back on!), but the truth is I’ve really only been experimenting in the kitchen for a relatively short amount of time.

OMG! Those zucchini burgers are so amazing. They are even good cold the next morning! My mom asked how long the left-overs keep, but I have no idea. They are always gone by the next day! I use the mediterranean herb feta from Trader Joes, roasted garlic bread crumbs and some red pepper…gotta put those on the menu in the near future!

Hi Kim! So glad you tried and loved them! They’re one of my favs too but I haven’t made them in ages. I have to get back on that!

Love these zucchini burgers. I asked at Ruby Tuesdays what they use, and it was jarred roasted red peppers, and their specialll\y seasoned bread crumbs for their crab cakes. I like your recipe better!
